Suwon Station kalguksu on a couple-ring date: thick kal-nakji, Daseon

In short

Daseon Kalguksu Main Branch (다선칼국수 본점) is an old-school kalguksu (knife-cut noodle soup) restaurant with a faded sign on Hyanggyo-ro in Suwon, Gyeonggi. On the day the writer and her boyfriend went to Suwon to get couple rings, they ordered kal-nakji (octopus kalguksu) for 2 with extra-thick broth, plus bossam suyuk (boiled pork); the kal-nakji was about as spicy as Shin Ramyun with plenty of octopus and clams, and the suyuk was tender with no gamey smell. For a Suwon date with old-school charm and spicy kalguksu, Daseon Kalguksu Main Branch is a good choice.

Daseon Kalguksu Main Branch: an old-school find on our Suwon couple-ring date

Daseon Kalguksu Main Branch (다선칼국수 본점) is an old kalguksu place with a faded sign, tucked in an alley on Hyanggyo-ro in Suwon. It was the weekend, and I had come to Suwon with my boyfriend to pick out couple rings. The excitement of choosing rings didn't last long, though. As the saying goes, even Mount Kumgang is better after a meal, and we were getting hungry. While we wandered the alley wondering what to eat, one shop stood out.

The sign had faded so much that you could feel its age from far away. A real old-timer of a kalguksu shop. There are lots of sleek, stylish restaurants these days, but sometimes a rough, homey exterior like this gives off serious great-restaurant vibes, doesn't it? Half curious, half hopeful, we slid open the door and stepped inside.

What is the inside of Daseon Kalguksu Main Branch like?

A twist the moment we opened the door: an old-school place packed with customers

Inside Daseon Kalguksu Main Branch, full of customers

Even after the main mealtime had passed, Daseon Kalguksu Main Branch was full of customers. Compared with the quiet look outside, the inside surprised me. The place was already packed! From neighborhood locals to people who seemed to have come from far away, every table was taken, and I thought, "Ah, we came to the right place." The tables and chairs all had the feel of years of wear and use.

Old-school dining room with well-worn tables

This wasn't interior deliberately styled to look retro. It was the real thing, a place that has welcomed customers in the same spot for a long time and blended in naturally. Just sitting down and looking around, I felt a bit drunk on the homey atmosphere.

Kal-nakji comes with barley rice and geotjeori kimchi

Appetite-boosting barley rice and crisp geotjeori to start

Basic spread set out after ordering kal-nakji

At Daseon Kalguksu Main Branch, we ordered kal-nakji (octopus kalguksu), the signature dish, for 2, and the basic spread came out: barley rice topped with seasoned radish (mu-saengchae) and geotjeori (fresh-tossed kimchi). The server brought it out quickly as soon as we ordered. The first thing I noticed was the barley rice in a small bowl. Coming to a kalguksu place and not getting this barley rice always feels a little disappointing, and here they serve just the right amount.

A bowl of barley rice topped with seasoned radish

The barley rice was topped with a generous heap of nicely ripened, tangy radish. I drizzled gochujang (chili paste) from the table around the bowl to taste, smelled the nutty sesame oil, mixed it all up and took a big bite. The popping texture of the barley grains, the crunchy radish and the sweet-spicy gochujang were honestly perfect together.

Then came the geotjeori, kalguksu's eternal partner, which seemed made fresh every day. It brought my lost appetite right back. It wasn't too spicy or too salty, and the natural sweetness and freshness of the cabbage came through, so I kept reaching for it even before the kalguksu arrived.

How spicy is Daseon's kal-nakji, and how do you choose the broth?

Spicy just to my taste, kal-nakji loaded with clams and octopus

Kal-nakji for 2 served in a large bowl

At Daseon Kalguksu Main Branch you can choose how thick the kal-nakji broth is when you order, and the spice felt like Shin Ramyun level. Once the barley rice had warmed us up, the star of the day finally arrived. It came in a huge bowl, and the sight alone was overwhelming and made my mouth water. We're a couple who prefer a rich, thick broth where the seasoning really clings to the noodles over a clear, light one.

Kal-nakji broth ordered extra thick

So without hesitation I asked for it "extra thick," and it came out with exactly the thick, deep broth we wanted. I tried a spoonful of the broth first, and the sharp, spicy kick filled my mouth. The menu and reviews said it's known for being spicy, so my boyfriend, who can't handle spice well, was a little worried. Luckily it wasn't recklessly hot, just pleasantly spicy, about Shin Ramyun level. People who don't eat spicy food well could enjoy it without any strain. What surprised me most, though, was the generous amount of seafood on top.

Kal-nakji with plenty of octopus and clams

It was packed with plump octopus, and just cutting it into bite-size pieces with scissors took a long while. Clams, which give the broth its refreshing flavor, were piled thickly on the bottom of the bowl, so we got the chewiness of the octopus and the savory depth of the clams at once. The seafood was so fresh that there was no fishy taste at all, and the popping texture of the octopus with every bite was simply outstanding.

Thick, handmade-style kalguksu noodles

Falling for the chewy, thick noodles

Lifting up thick kalguksu noodles

The noodles at Daseon Kalguksu Main Branch weren't thin machine-pulled strands. They looked like handmade noodles, thick and chunky, which was part of the charm. When I started lifting them up to eat, the thickness varied slightly, as if they had been kneaded and cut by hand, which gave a fun texture. The thick, spicy broth had soaked in between the noodles, so even the noodles on their own were never bland.

The moist noodles were very chewy yet cooked soft through the middle, and every slurp left my mouth wonderfully full. Wrapping a piece of octopus in the noodles and topping it with crunchy geotjeori kimchi made a perfect triple combo. My boyfriend kept nodding while he ate and said this was truly a hidden master's place, not holding back his praise.

Is the bossam suyuk at Daseon Kalguksu worth adding?

A perfect finish: tender, gamey-smell-free suyuk boiled in one whole piece

Bossam suyuk added at Daseon Kalguksu

At Daseon Kalguksu Main Branch, most of the tables around us were having suyuk (boiled pork) with their meal, and the bossam suyuk we added was so tender it practically melted, with no gamey smell. We were already somewhat full from the kal-nakji alone, but we had fallen for this old-school place and had no idea when we'd be back in Suwon, so we added the bossam suyuk to leave no regrets. When it arrived, it looked different from the usual bossam specialty restaurants. It seemed like the meat wasn't pre-sliced and reheated but boiled whole and sliced to order, like at a country feast. The ratio of fat to lean was ideal, and you could tell it was juicy just by looking. I tried the meat first, dipped lightly in saeujeot (salted shrimp), and it was so soft that it melted after barely a few chews.

There wasn't even 1% of that porky gamey or musty smell, so you could tell right away how carefully and long it had been boiled. With no dryness at all and a tender texture, I kept eating it even though I was full. Sipping the spicy kal-nakji broth and then eating a piece of mild, nutty suyuk, back and forth, was a fantastic combination.

Why Daseon Kalguksu Main Branch works for a Suwon date

We wandered into this faded-sign old-timer by chance and found far more skill than expected, and I was in a good mood all day. If you want real old-school atmosphere in Suwon along with addictively spicy kalguksu and life-changing suyuk, I'd definitely recommend visiting. For us, it was such a great find that I think we'll end up coming back to Suwon soon just to miss this taste.
