They use a special aging method so there's zero fishy taste and the umami is genuinely excellent. It's especially known for perfectly thawed tuna with a flawless texture — no tooth-chilling coldness at all — a real aged-tuna gem in Incheon.

Inside Donggyeong Sukseong Chamchi: the bar counter seats
Inside, generous spacing between tables and a spotlessly clean setup made for a cozy meal. Sit at the tacchi (bar-style counter) and you can watch the owner slice the tuna right in front of you.

The walls are covered in celebrity autographs that clearly go back years, giving the place a warm, well-loved feel.

All-you-can-eat aged tuna menu: tiers and prices
Donggyeong Sukseong Chamchi's signature is its all-you-can-eat course, where you can feast on premium tuna without worrying about cost. The menu board listed five AYCE tiers per person (VIP, Bluefin, Tuna Head, Royal, Basic), plus set platters and rice dishes — a solid lineup.

Being a high-end tuna restaurant, there's also a good selection of sake to pair with the meal.
The Royal course for two: side dishes to black sesame porridge
We ordered the Royal course for two!

The basic banchan (side dishes) came out right away — octopus salad, vegetable salad, well-fermented kimchi, flying fish roe, and more, all good pairings for the tuna.
Next came broth, black sesame porridge, and yam juice. One spoonful of the porridge and the black sesame aroma hit immediately — perfect for taking the edge off hunger before the tuna arrived.

I expected the yam juice to be sticky, but it was sweet and smooth like condensed milk — no resistance at all, just delicious.

Then came mochi tofu and a single ginseng root each.

Aged tuna sashimi and which sauce suits each cut
Finally, the main event — the tuna sashimi! Gleaming and vivid in color, the aged tuna showed off its signature soft, non-tooth-chilling texture and deep flavor. The owner kindly recommended which sauce and pairing suited each cut.

Wrapped in seaweed with well-fermented kimchi, it cut through the richness perfectly — an amazing combination.

By the way, there's plenty of seaweed right next to the utensil holder, so you can help yourself as much as you like.
Next came corn kernels, udon, shrimp sushi, and fried ginkgo nuts. Right around when things started feeling rich, these came in to balance it out perfectly.
Rare cuts: tuna belly, head meat and tuna lips
Next up were belly and head meat!

And true to a place known for rare cuts, they even brought out precious tuna lips! The texture was uniquely plump and chewy — a real delicacy.

Right as things started to feel rich again, out came shrimp soy sauce sushi, braised tuna, grilled tuna, and crispy fritters,
followed by a spicy fish stew in an earthenware pot. The broth was refreshing and the tuna inside was so tender — the perfect way to cleanse the palate.
Bluefin and tail meat, then flying fish roe rice to finish
Next came the bluefin meat, with a deep, rich, nutty tuna flavor.

Tuna is really all about this rich flavor, and the bluefin cut — the one we all know best — paired perfectly with seaweed, the well-fermented kimchi cutting the richness nicely.

They even brought out the tail meat at the end, generously. We didn't have to ask for more — it just kept coming, and by the end it felt like we'd eaten an entire tuna.
For dessert, we finished cleanly with flying fish roe rice, with its little popping texture, and maki rolls.
