This is the tripe soup. It's loaded with beef tripe, blood sausage, bean sprouts and dried napa cabbage. There's dadaegi (spicy chili paste) mixed in, so I stirred it in well. The flavor was spicy and hearty with great umami — no gamy smell from the tripe or blood sausage, the tripe was chewy, the blood sausage popped with savory richness, and the crunchy bean sprouts made it refreshing. So good. I ended up eating three whole bowls of rice with the tripe soup. Generous portion too — one hearty bowl of tripe soup. Made me crave soju while eating it. This is the haejangguk. It's a spicy dadaegi-based soup with blood sausage, beef brisket shank, bean sprouts and dried napa cabbage. The flavor was spicy, full of umami, and hearty. The bean sprouts made it refreshing and crunchy, the beef brisket shank was clean-tasting, and the blood sausage was savory too — generous portion, so delicious. Three bowls of rice each. Perfect match with soju. The dadaegi was delicious and spicy. One earthenware bowl and you're set — bursting with umami, and the glass noodles were chewy and slurpable. A really tasty haejangguk.

Seonji soup: clear broth with beef blood and bean sprouts

This is the seonji-tang. A clear broth with blood sausage and bean sprouts served in an earthenware pot. The broth was light and refreshing — I loved it. The blood sausage had no gamy smell, soft and savory, so tasty. Fresh blood sausage plus crunchy bean sprouts made this the perfect dish for a hangover. It arrived bubbling hot, and I really enjoyed a warm bowl of seonji-tang.
