Seokmo-ri sundae-guk in Gimpo, a Chuseok opening run: Paldam Sundae
In short
Paldam Sundae Gimpo Main Branch is a sundae-guk (Korean blood sausage soup) restaurant on Ungok-ro near Seokmo-ri in Gimpo, Gyeonggi, known for unlimited organ meat refills. On the last day of the Chuseok holiday, the writer arrived with family at opening time, pushed back their CatchTable waitlist spot once before getting in, and ordered the omakase with three kinds of sundae plus clear and spicy sundae-guk. Paldam Sundae's strengths are the organ meat self-bar and the fiery spicy broth, and with a 3pm close, planning a morning visit is a must.

Near Seokmo-ri in Gimpo there's a waitlist hotspot sundae-guk (blood sausage soup) restaurant that gives you unlimited organ meat — Paldam Sundae Gimpo Main Branch! My mom kept saying she wanted to go, but it always closed early once ingredients ran out, so we never made it. Then on the last day of the holiday, we did an opening run and finally got there. Shall we go check out Paldam Sundae, the Seokmo-ri favorite with unlimited organ meat?
Paldam Sundae Gimpo Main Branch hours and closing day
Paldam Sundae Gimpo Main Branch is open Monday, Tuesday, Wednesday, Friday, Saturday, and Sunday from 10am to 3pm, with last order at 2:30pm. Closed on Thursdays.
How long is the wait at Paldam Sundae, and how can you shorten it?
Paldam Sundae opens at 10am, but CatchTable waitlisting is available starting at 9:30am. The wait is bigger than you'd expect, so hitting the CatchTable button before you even leave home helps cut down the waiting..!
It was 9:54am on a Sunday, still before opening, and there were already 11 teams waiting...! But the line moved faster than I thought. They said it'd take about 30 minutes, but within 10 minutes we were already 3rd in line..! So I delayed our spot once. Pushed it back to 6th and arrived at the restaurant..! Waited about 10 more minutes and got in~~
Paldam Sundae exterior and parking
The Paldam Sundae Gimpo Main Branch building was smaller than I expected. You can park right in front of the restaurant or across the street!

Since it's such a popular Gimpo sundae spot with such long waits, they recommend reserving through CatchTable before visiting. Takeout is available with no wait — just tell them at the counter! And if you walk in, just enter your name on the in-store waitlist tablet~

There's a restroom at the far left of the restaurant, and next to it they've set up drinks like Jerusalem artichoke tea, onion skin tea, and mix coffee. You can sip these while you wait.
Inside Paldam Sundae and the unlimited organ meat refills

Paldam Sundae Gimpo Main Branch's interior isn't huge. About 10 tables of four? Even on the morning of the last day of the holiday, it was already fully packed.
And Paldam Sundae's biggest strength is unlimited organ meat refills!! (Only available when each person orders their own bowl) The organ meat types were liver, lung, aorta, heart, and windpipe.

There was really so much, and it was great that we could take as much as we wanted hahaha, since my family are all organ meat lovers..
Paldam Sundae menu and side dishes

Here's the menu and prices at Paldam Sundae Gimpo Main Branch. The basic side dishes are napa cabbage kimchi and cubed radish kimchi.

The kimchi flavor was just so-so.

On the table there's also perilla powder, salted shrimp, and dadegi (spicy chili paste)~ The sauces are vinegared gochujang with perilla powder sprinkled on top, and soy sauce. We added salt and pepper to this too!
Does the Paldam Sundae organ meat self-bar have any gamey smell?
Since Paldam Sundae gives unlimited organ meat when you order one bowl per person~~

Just scoop a little from the self-bar and eat! Genuinely zero funky smell, and it was really fresh. I love lung, so I ate a ton of just lung hahahaha.
Which sundae come in the Paldam Sundae omakase?
Paldam Sundae's omakase set is a combination of 3 types out of the restaurant's handmade sundae — ginseng sundae, cheongyang chili sundae, nut sundae, blood sundae, and plain sundae — plus a small portion of boiled pork. This doesn't include sundae-guk! Think of it more like a side dish.

Today's omakase sundae types were cheongyang chili sundae, blood sundae, and nut sundae — three kinds. The cheongyang chili sundae wasn't that spicy?!?! Dipped in vinegared gochujang with perilla powder, it was good.

This is the nut sundae. Same as before, it doesn't actually taste like nuts hahahahahahaha. But it was tastier than the cheongyang chili sundae!

This one is the blood sundae. Chewy and delicious.

The boiled pork had some tender parts and some slightly leaner, plain parts.
Clear vs spicy sundae-guk at Paldam Sundae: what's the difference?
Paldam Sundae has two types of sundae-guk, clear and spicy, and for each one you can choose whether to include fat, sundae, or just lean meat!
Clear sundae-guk (with fat, with sundae)
The clear sundae-guk I ordered was a milky broth packed full of ingredients.
Spicy sundae-guk (no fat, with sundae)
This is the spicy sundae-guk my mom and dad ordered. My dad, who can't handle spicy food, ordered the spicy sundae-guk of all things? We were surprised, but it turned out to be loaded with spicy chilies inside hahahaha. Dad coughed and choked after one bite. In the end, I swapped my clear sundae-guk with him.. hahahahahahahahahahaha

There's a lot of lean meat and sundae inside! There were 4 pieces of sundae.

Paldam Sundae's spicy sundae-guk is quite spicy. I'd say spicier than Shin Ramyun? A kind of sharp chili spiciness. It's already seasoned, but my mom said adding more perilla powder and salted shrimp makes it more savory, so I followed suit haha.

That flavor that cures a hangover even though I didn't drink yesterday.. The broth was spicier and tastier than even the sundae and lean meat, so I ate it happily!

Finished it completely~ Ate well~

Because of the extra room in my stomach from the Chuseok holiday, I ended up eating a meal plus two bowls of bingsu (shaved ice dessert),, let's take a nap at home after eating it all~~
