I personally love tendon, so I picked the beef brisket tendon pho, one of the signature menu items, first. For the other main, I was looking at the rice dishes and decided to try the new soy-sauce grilled bulgogi rice bowl. I couldn't skip a side either, so I got the cha gio set along with a cold soda.

Since I usually love doganitang (ox knee cartilage soup) or tendon cuts, I ordered Wolmidang's beef brisket tendon pho without hesitation. It came loaded with bean sprouts that still had a gentle crunch, tender brisket and flank, and big chunks of tendon.

There was a small side plate, so it was easy to share with my friend, and the broth, simmered over 6 hours, was clean and light without any greasiness, with great depth of flavor.

With soft rice noodles, crunchy bean sprouts, meat, and tendon all piled together, this pho near Chonnam National University disappeared in no time.

When choosing a main, a rice dish is a must-try, and this new item from Wolmidang came out, so I tried it right away.

The bulgogi, grilled directly over flame, paired well with freshly cooked domestic new rice mixed with turmeric powder, a fried egg, sprouts, and pickled onion.

Neither of us can handle spicy food, so we ordered it in soy sauce style, but the grilled bulgogi bowl can also be made spicy, so those who like heat can order to their taste. The balance of carbs, protein, and fat from rice and meat made it perfect for a post-workout meal.

I love trying a variety of things, so a side dish is non-negotiable. The cha gio (Vietnamese fried spring rolls) came with two sauces, sweet chili and peanut, so we could enjoy even more flavors.

The couple cha gio side at this Gwangju restaurant near Chonnam National University comes with three kinds of fried bites, two each: menbosha (shrimp paste sandwiched between fried bread), sweet potato cha gio, and crispy chewy shrimp cha gio.

Fried food usually gets greasy after a while, but Wolmidang's cha gio and menbosha drained the oil well so they never felt heavy, and the menbosha was packed with plump shrimp — pure happiness for a shrimp lover like me.

The shrimp cha gio was also great with its crispy texture, and since I love sweet potato, the sweet potato cha gio — looking like purple sweet potato with its color and packed with sweet mousse inside — was easy to eat almost like a dessert.

The extra meat cha gio we ordered, a Vietnamese-style fried dumpling, was crispy outside and juicy inside, packed with meat and minced vegetables — a filling side dish.
