Byeollae gopchang restaurant with staff grilling: Chodaechang
In short
Chodaechang Byeollae Branch is a grilled beef-intestine restaurant in Byeollae-dong, Namyangju. I had Assorted Grill B and kimchi noodles on a weekday evening, and appreciated the staff grilling everything while the dining room was busy, so reservations seem wise.

After work on a weekday, I had Assorted Grill B and kimchi noodles at Chodaechang Byeollae Branch (초대창 별내점). The staff handled the grilling, which made the meal easy, but the restaurant was busy even on a weekday evening, so I felt it would be better to make a reservation.

Where is Chodaechang Byeollae Branch, and is parking available?
The address is 12-18 Byeollae 5-ro 5beon-gil, 1st floor, Namyangju-si, Gyeonggi-do. According to the hours listed in the original article, it is open Tuesday through Saturday from 4:00 PM to midnight and Sunday from 4:00 PM to 11:00 PM, and is closed on Mondays. Four cars can park in front of the restaurant.

Is it better to make a reservation on a weekday evening?
When I visited on a weekday evening, many seats were already occupied, and I also saw tables marked as reserved. The atmosphere was lively. Rather than assuming it will be quiet just because it is a weekday, I recommend making a reservation in advance.

The interior was decorated with soft lighting and small decorative objects. The tables were spaced comfortably apart, and the setting felt pleasant for dining. I also felt that the ventilation was good, and thought it would suit a date or a gathering with coworkers.
What did I order, and how were the sides?
I ordered Assorted Grill B and finished with kimchi noodles.

There were also several types of wine available to drink with the daechang (large intestine). The restaurant 안내 said that corkage was available.

As soon as we sat down, the staff prepared the fire and set out several side dishes.

The potato salad was my favorite of the side dishes. I kept reaching for it and ended up having it refilled three times.

How much does the staff help with grilling?
The staff grilled everything themselves from start to finish. They placed the daechang, makchang (small intestine), and teukyang (beef tripe) over the charcoal and grilled each cut while checking how well it was cooking.

They also cut everything into bite-sized pieces, so I did not have to worry about grilling or turning the meat. Thanks to that, it was easy to eat and talk with the person I came with.

How did the daechang and teukyang taste?
I dipped the grilled daechang and teukyang in soy sauce. I did not notice any unpleasant smell or gamey odor, and the pieces had a savory flavor and plenty of juices. They were crisp on the outside, while the texture was chewy and tender when I bit into them.
The sauce made the daechang’s rich, fatty flavor feel less heavy. After eating the grilled meat, I finished the meal with kimchi noodles to refresh my palate.
