Hi, I'm Lee Ji!

Why do I love intestines so much (?) I like gopchang, daechang, makchang — all of it — but makchang especially, so much that I went on a trip to Daegu just for it, and the Daegu-style makchang was incredible!

So when I heard Baegyeom Makchang, a Daegu-style makchang place in Euljiro, was getting hot lately, I had to visit.

Baegyeom Makchang is easy to find — come out of Euljiro 3-ga Station exit 11, walk into the Cheongwaok alley, and you'll spot it in the trendy Hipjiro area. Euljiro itself has expensive, scarce parking, so walking is recommended.

Nearly full by 5pm on a weekend — what about the wait?

I went around 5pm on a weekend and the place already had a good number of people, filling up soon after. On weekends it's visitors out exploring Euljiro, and on weekdays it's office workers coming after work — a restaurant with a real wait, so I'd recommend going before peak time!

Catch Table reservations work too haha! Group bookings are also possible. I came for a date and would recommend it for that, but the space is pretty spacious, so it'd also be great for a work dinner with colleagues nearby.

What to order at Baegyeom Makchang

Baegyeom Makchang is a Daegu-style makchang specialist — no gopchang or daechang here. But they do have limited-quantity makchang sundae (blood sausage), chewy pork neck, and makchang hot pot haha!

The side dishes were interesting too — salt-aged doenjang jjigae (soybean paste stew), jeotgal fried rice, kimchi noodle soup, and even a tomato basil ramen! I wanted to enjoy the true flavor of Daegu-style makchang, so I ordered two servings of Daegu makchang and one serving of spicy marinated makchang.

At Baegyeom Makchang you grill it yourself, but there's a big sign on the wall with grilling instructions, so even clumsy hands like mine can grill it well without worry.

The special soybean makchang sauce

Makchang restaurants always keep the side dishes simple, right? Because the makchang itself is enough to enjoy on its own. Perilla leaves, green onion kimchi, salt, ssamjang, garlic — the usual lineup — but Baegyeom Makchang has its own special makchang sauce!!

A special soybean-based makchang sauce unique to Baegyeom Makchang!! Mix in a handful of chili peppers and eat it with the makchang. The sauce itself is so delicious it makes the makchang even better.

Daegu-style makchang, salt-aged to cut the smell

To get rid of makchang's characteristic smell, Baegyeom Makchang salt-ages it — this is the defining feature of Daegu-style makchang!! There was even a fridge for the aging process.

Two servings, and doesn't it look like a lot? And everything was nice and plump, which already earns points. It came pre-grilled from the kitchen.

A savory smell the entire time it grilled

I cut it myself so it's not the prettiest presentation, but doesn't it still look delicious?? Makchang with a bad smell usually gives off a funky odor while grilling, but Baegyeom Makchang's makchang gave off a savory smell the whole time, so much that I kept asking the staff if it was done yet before it even finished cooking.. sorry about that.. that's how good the smell was.

Makchang is usually best grilled crispy, but Baegyeom Makchang's isn't tough at all — it's soft, so even without grilling it crispy it was tender, not chewy, and so savory!! That said, grilling it crispy made the outside crunchy and the inside chewy, which was even more delicious.

Dipping it in the special makchang sauce made it way better. Highly recommend dipping it in the sauce!! The green onion and chili really cut through the makchang's slight richness.

I made a little skewer of makchang and popped it all in one bite, and my mouth was so happily full ㅠㅠ Not sure if makchang is tasty? Want to try a Daegu-style makchang spot? Just go to Baegyeom Makchang and try it.

The spicy marinated makchang — this was the real deal

I was curious about the spicy marinated makchang too, so I ordered it. It comes out fully cooked already. I ordered just one serving to try, and isn't the portion huge?! Between this and the salt-grilled version, Baegyeom Makchang seems to just give generous portions.

Honestly, I already thought the plain Daegu makchang was great, but the spicy marinated makchang is the real winner!! The sauce tastes kind of like a good fried chicken sauce — but also not quite that, how do I even describe this sauce flavor..

It's spicy but at a mild level, so even people who can't handle spice could enjoy it. The onions on top, dipped in the sauce, were seriously delicious ㅠㅠ Highly, highly recommend ordering a serving of the spicy marinated makchang too!!

They say if you play with fire you'll wet the bed, but thankfully I didn't have any accidents.

I love makchang and have been to many makchang places, but if you're curious about Daegu-style makchang and looking for a great spot, I highly recommend Baegyeom Makchang! (Note to self: definitely try the spicy marinated makchang…)
