Hongdae café: soft and firm peaches on one soufflé, Think Fruit
In short
Think Fruit is a seasonal-fruit soufflé pancake café near Exit 7 of Hongik Univ. Station in Mapo, Seoul. On a weekend visit with a friend, the writer ate Think Fruit's peach soufflé (₩22,000), topped with two kinds of peach, soft and firm, and took away a classic royal milk tea topped with ice cream and a strawberry condensed milk latte in a bottle. The verdict: Think Fruit's fluffy soufflé was worth the 15–20 minute wait after ordering.

Think Fruit's peach soufflé: I nearly fainted at the looks and the taste!

The peach soufflé at Think Fruit is ₩22,000, and since it's cooked as soon as you order, you wait about 15–20 minutes. It was today's star, which I picked as if hypnotized the moment I saw the menu, and when it arrived at the table it looked so fantastic that "I could faint" just came out on its own!
And the wait was not a waste at all, because the result was perfect. First of all, the texture of the soufflé pancake itself is honestly crazy.
It's airy and fluffy, so jiggly you can feel it wobble before the knife even touches it. The moment you take a bite, it melts away in your mouth, and that softness is truly the best.
Soft peach and firm peach on one plate
This season's main fruit, peach, comes generously piled on in both the soft kind (malangi) and the firm kind (ddakddaki), so there's real fun in picking and choosing between them.

The crisp, sweet charm of the firm peach,

and at the same time the soft, juicy charm of the soft peach: a combination no fruit lover could pass up.

Add the Häagen-Dazs ice cream on the side of the plate, the soft whipped cream, and a pour of sweet syrup over everything, and you can't help squealing "Kyaaa!" The freshness of the fruit, the sweetness of the ice cream and the fluffy soufflé go together so perfectly that I don't know how many times I said "You really have to try this!" Before I knew it, between all the gushing, the plate was totally empty.

Think Fruit drinks: royal milk tea with ice cream and strawberry condensed milk latte
To take the sweetness of the dessert up another level, I ordered a classic royal milk tea (ICE, ₩8,000) and a strawberry condensed milk latte bottle (₩8,000) to go.
Addictive classic royal milk tea
Think Fruit's classic royal milk tea hit my taste exactly. The milk tea itself was rich and fragrant, and it has a unique look with a hefty scoop of ice cream sitting on top. It was my first time dunking ice cream into milk tea, and it turned out to be way more addictive than I expected! The sweet yet slightly bitter black tea aroma mixes with the smooth ice cream to give a rich, luxurious-smoothie kind of feel. The more you drink, the more your straw keeps going back for another sip.

Fresh, sweet strawberry condensed milk latte
The one I ordered along with it,

the strawberry condensed milk latte, was so pretty even in its takeout cup. Thick strawberry pulp syrup at the bottom, smooth milk and sweet condensed milk formed layers that made me feel fresher just looking at them.
The freshness of real strawberries and the soft, rich sweetness of condensed milk fill your mouth. It tastes of fresh fruit, not artificial syrup, so it was also the best choice to take away and sip while strolling the Hongdae streets.

Think Fruit in Hongdae: final thoughts
Seasonal fruit desserts made with real care, plus drinks full of personality: Think Fruit was perfect! When you need a sweet break, I strongly recommend Think Fruit, where both your eyes and your mouth are happy, to feel the true charm of fruit desserts.
