Uijeongbu date-course café with 16-hour aged Basque: Forerest
Forerest is a forest-set outdoor café on Nogyang-ro in Uijeongbu, Gyeonggi. I visited Forerest two days in a row, ordering the classic Basque cheesecake with an Americano at a shaded outdoor table on day one and the matcha Basque cheesecake on day two. Forerest bakes its Basque cheesecake in-house and chills it for 16 hours, so the outside is nutty and the inside is as soft as cream — an easy date-course stop on a drive near Seoul.
