First round: herbal boiled pork and buckwheat noodles in perilla sauce

The first round arrived as a full spread. The herbal boiled pork (hanbang suyuk) with seasoned vegetables was a good pairing of tender meat and crunchy veg, and the vegetable salad with pineapple-kiwi sauce opened up the appetite with a refreshing tang. The buckwheat noodles in a nutty, creamy perilla sauce had a soft charm quite different from a typical spicy noodle dish, while the tofu with kimchi salad brought a familiar, comfortable balance to the course.

Perilla tteokbokki, vegetable pancake and green laver konjac japchae

The perilla tteokbokki, stir-fried with dried eggplant, dried squash and dried radish strips in a special sauce, was a distinctive dish where the textures of the dried vegetables mingled with the nuttiness of perilla. The vegetable pancake had a golden, crisp texture that came alive with a garlic-scape sauce on the side, and the laver konjac japchae was light and refreshing. With several plates all landing at once, each with its own flavor and texture, it was fun for the three of us to sample one dish at a time.

The second round brought minari tteokgalbi, octopus-shrimp stir-fry, doenjang soup, ssamjang, 5–6 side dishes, and rice. The minari tteokgalbi paired hearty meat with the fragrant lift of minari (water dropwort), and it went beautifully with rice. The octopus-shrimp stir-fry let us enjoy the chewy texture of both octopus and shrimp, and its mild spiciness followed naturally after the earlier dishes. With doenjang soup, ssamjang, and the side dishes rounding things out, the meal ended feeling like a proper, satisfying Korean dinner.
