📍Cheongju's dry-aged meat spot, Baeksan Hwarro📍 Coming back from a trip around Cheongju, my husband and I were trying to figure out what to have for dinner. We both love dry-aged meat, so we decided — let's actually do dry-aged pork properly this time! That's how we ended up at Baeksan Hwarro Techno Polis Songjeol Branch, right in Cheongju's Techno Polis district.

Baeksan Hwarro Techno Polis Songjeol Branch has its own private parking lot right next to the store, fitting up to 14 cars. I was a little worried about parking since it's a BBQ place in the middle of the city, but thankfully we parked easily and walked right in.

We arrived right as dinner service was starting and there were already quite a few customers, and by the time we finished eating, the tables were nearly all full. Made me think — a place this busy must have a reason, haha.

I liked the atmosphere too. It has that comfortable, old-school feel while still being overall clean with a slightly hip touch, so it felt like a BBQ place with a modern sensibility. And since they specialize in dry-aged meat, I already had high expectations walking in.

What 48-72 hours of dry aging does to the pork

Baeksan Hwarro picks good pork and dry-ages it for 48 to 72 hours. Since the meat goes through that aging process, I was expecting a different flavor from regular pork belly. They also had a Cheongju-style soy sauce pork belly you dip in a special soy sauce, but that day I was curious about the basic meat flavor, so I went with the dry-aged pork belly.

The menu said the kimchi cheonggukjang was delicious, so I of course ordered it too — turns out it's actually included by default, haha! Total jackpot, haha. The owner kindly canceled the extra order, so we just added rice and steamed egg, plus a mulberry highball to go with the meat!

The grill plate we cooked the meat on had the Baeksan Hwarro logo stamped right on it, and small details like that gave me a real sense of trust in the place.

There were several side dishes too, and every single one paired perfectly with the meat, which I really liked.

Apparently staff used to grill the meat for you, but as the place got busier, it switched to a self-grilled setup, haha. In exchange, they say they give you a bigger portion of meat, which honestly works for me — more meat, please...★

The dry-aged pork belly at Baeksan Hwarro clearly looked like good-quality meat, and the moment it hit the grill, this savory smell just rose up. Watching it turn golden brown was a great sight too.

Taking a bite, you could really feel that soft texture and deep flavor unique to dry-aged meat — delicious on its own and just as good wrapped in lettuce.

My husband and I got so into eating that the meat just magically disappeared, haha.

The kimchi cheonggukjang had a savory yet refreshing flavor, great for a spoonful between bites of meat, and the soft steamed egg paired well with the meat too.

The mulberry highball had a refreshing taste that helped clean up the palate after the rich, fatty meat!

Why the thick pork rind is worth ordering

I was debating whether to order more meat when the pork rind caught my eye looking delicious, so I ordered one for the first time in a while.

I think this was the first time I'd seen pork rind this thick and in such good condition — I was a little surprised.

It had a completely different charm from the dry-aged pork belly, making it a great specialty item to try.

If you personally love pork rind, I really recommend trying this one too. And mixing rice into the cheonggukjang is just the unwritten rule!

Finishing the meal with bibim naengmyeon

We were pretty full already, but if you're at a BBQ place, you just can't skip naengmyeon (cold noodles). We ordered the bibim naengmyeon to finish, and it was better than expected.

I'm quite picky about naengmyeon since I genuinely love it, and this didn't feel like an afterthought side dish at a BBQ place — the noodles and seasoning tasted like something from a dedicated naengmyeon restaurant. I really enjoyed it!

From the dry-aged pork belly to the pork rind, the kimchi cheonggukjang, and the naengmyeon, everything was satisfying, and the easy parking made it even better. It seems like a great spot to stop by whenever you're craving dry-aged meat around Cheongju Techno Polis.
