While looking for somewhere to eat alone near Busan National University of Education Station, I visited Sinseon Myeonga (신선면가) in Yeonsan-dong. It was a hot day, and I wanted something tangy rather than a hot broth, so I ordered bibim kalguksu (spicy mixed knife-cut noodles) and tasting bossam (boiled pork wraps).

Is it suitable for eating several dishes alone?
The restaurant had an atmosphere where solo diners could eat comfortably. You could have a bowl of kalguksu on its own, or choose a set that included tasting bossam.

When dining alone, it can be awkward to order several dishes, so I liked that I could add tasting bossam. It was a good option when one dish did not feel quite enough.



What ingredients are used for the noodles and rice?
Sinseon Myeonga says it uses fresh noodles made from dough prepared and extruded in-house every day.

When I tried them, the noodles had a springy, chewy texture. The restaurant says it cooks its rice with a blend of Suhyangmi and Imgeumnimssal rice.


What can you choose besides kalguksu?
Besides basic kalguksu, there were bibim kalguksu, sujebi (hand-torn dough soup), cold kalguksu, and perilla oil kalguksu. On days when noodles do not appeal, you can choose bibimbap or pork cutlet.







I chose bibim kalguksu because I wanted something tangy. Since noodles alone felt a little incomplete, I ordered tasting bossam as well.

How are bibim kalguksu and bossam for one person?
The basic table setting was prepared quickly after I ordered. That day, sundae (Korean blood sausage) came as part of the basic spread, which I was happy about because I like sundae.

Once the bibim kalguksu and tasting bossam arrived, the amount looked quite substantial for one person. At first, I wondered if I could finish it all.


Once I started eating, I found myself alternating between the tangy bibim kalguksu and the bossam. Before I knew it, I had eaten almost all of it.

After mixing the bibim kalguksu sauce evenly, the noodles turned red. The tangy sauce whetted my appetite, and I also liked putting a piece of bossam on the chewy noodles.

What comes with the tasting bossam?
Because it was a tasting dish, I expected a small amount, but it was more generous than I expected. It came with lettuce, bossam sauce, dried shredded radish, ssamjang, garlic, and chili peppers. I put the tender bossam on lettuce and ate it with dried shredded radish and garlic.
The bossam also came with tofu. Topping the tofu with kimchi worked well: the tofu was mild and the kimchi crisp.

With the bossam, tofu, and kimchi, it felt like having a small bossam spread. It was a satisfying combination for me because I wanted both noodles and meat while dining alone. At the end of the meal, I also received sikhye (sweet rice drink) as a service.
