For anyone searching for a Gaepo-dong café with great desserts, here's my honest, first-hand review, with a parking tip and a signature combo that won't let you down. Lately a lot of the bakery cafés I've tried looked flashy but fell short on the basics, the coffee and the desserts. Minimale, the Gaepo-dong dessert café I visited this time, made my husband and me both open our eyes wide at the very first sip, haha

Where can you park at Minimale Gaepo?
You can park beside the shop at Minimale Gaepo. If you're coming by car, it's worth checking with the shop before you go, so you can park easily without a wasted trip.
What Minimale Gaepo feels like inside
Minimale Gaepo is a minimal, clutter-free space with a neat, quiet warmth. The moment I opened the door, I was welcomed not by any harsh smell but by a gentle scent of coffee beans and comforting butter.

Without any showy styling, the basic furniture layout and calm lighting melted away the tiredness of a weekend morning.

Even the corners of the floor and the glass of the display case were tidy, without a speck of dust, so you can tell right away how carefully they look after the place every morning.
Minimale Gaepo's bakery lineup
The display case at Minimale Gaepo is stocked with baked goods like salt bread, egg tarts, financiers, babka and levain cookies. As I browsed the lineup, the butter aroma was overwhelming, just what you'd expect from same-day baking at a Gaepo-dong bakery lab, haha

There was glossy salt bread and golden-baked egg tarts, plain and caramel pecan financiers, and even babka, the pride of the Gaepo-dong bakery lab. The case was nicely full.

The hefty original levain cookie, the matcha levain cookie with its deep green-tea dough, and the oatmeal raisin cookie were each as big as a palm and packed full, which looked filling just to look at, haha. They're neatly wrapped one by one, so they're also perfect to grab on the way to a weekend outing.

Minimale Gaepo drinks menu and bean choices
At Minimale Gaepo you can choose from three beans, Balance, Dunkel and Decaf, and lattes can be switched to oat milk. Looking at the coffee menu, the bean options alone are impressively solid.

You can pick from Balance, with fruity sweetness and acidity; Dunkel, with a rich, nutty sweetness; and Decaf, which is easy on you even at night. The signature Helsinki Latte we tried had the dark-chocolate notes of the Dunkel bean with smooth milk melting into it, and I couldn't help exclaiming from the first sip.
There's also a flat white and a British Einspänner on a strong espresso base, and on the non-coffee side a Boseong matcha latte, Belgian dark chocolate and Ronnefeldt herbal teas. It's broad enough that everyone from coffee lovers to people sensitive to caffeine can happily settle in, haha. Being able to swap your latte to oat milk was a thoughtful touch.
What do the Helsinki Latte and hot Boseong matcha taste like?
Minimale's Helsinki Latte is a signature latte where the natural sweetness of milk meets strong espresso instead of sugary sweetness, and the hot Boseong matcha my husband ordered was unsweetened and nutty. The drink I was most looking forward to was the signature Helsinki Latte, said to reinterpret memories of a trip to Finland.

It wasn't an artificial sugary sweetness that leaves your mouth dry; the nutty natural sweetness of the milk and the strong espresso blended together beautifully, haha

The hot Boseong matcha my husband ordered wasn't sweet, and kept the deep, nutty flavor of the green tea leaves, which calmed the stomach nicely.

Minimale levain cookie and matcha cookie: how they taste
The levain cookie and matcha cookie at Minimale Gaepo are New York-style, thick and moist, and went well with the Helsinki Latte and the Boseong matcha. Pairing perfectly with the drinks, the cookies had a thick, moist texture that was a work of art, just like the New York original.

Being right at the door of the Gaepo-dong bakery lab, we got to enjoy a fresh butter flavor as if the cookies had just come out of the oven, ㅠㅠ The levain cookie, packed edge to edge with walnuts and chocolate chips for a hearty chew, was excellent, and the matcha cookie, with sweet bits studded in its bittersweet green-tea dough, had a bewitching taste that calls for coffee.

A Gaepo-dong side-street café that gets the basics right
All the way through, it came across that Minimale Gaepo is a café that competes on its own researched roasting profile and honest ingredients rather than flashy decoration. Fad dessert cafés that focus only on showy decor tend to get boring fast. Chatting quietly with my husband for the first time in a while and enjoying a relaxed Gaepo-dong café dessert time, I felt the whole week's tiredness wash away, haha
If you want high-quality specialty coffee together with freshly baked New York cookies, save Minimale at the top of your Gaepo-dong café dessert list. Why not recharge with a little happiness this weekend, with fragrant coffee and a sweet bite of cookie alongside someone you care about?
