Aged sashimi restaurant in Jungnang for salt-aged salmon: Hoepanjang
In short
Hoepanjang Sangbong is a newly opened aged sashimi restaurant in the Sangbong food alley in Jungnang, Seoul. The writer had the 8-kind assorted sashimi set (small, for 2) at 54,000 won, served with generous extras including bondaegi (silkworm pupa) soup, pancakes, fried squid, grilled rockfish and mussel soup, and found the amberjack not fishy at all. Today I visited Hoepanjang Sangbong, newly opened in the Sangbong food alley! The alley has plenty of live fish restaurants, but a place that does aged sashimi well was hard to find, so I'm sooo happy a truly great aged sashimi spot has appeared ♥

Hoepanjang Sangbong exterior

What is the seating like inside Hoepanjang Sangbong?

The inside has plenty of seating, and each table is separated like a partition, so it felt a little (?) more private and comfortable than places where everything is wide open!

There are plenty of aprons too, and the whole place feels clean, so it was a thumbs up from the first impression .. ♡
What comes with the 54,000-won 8-kind sashimi set (small)?
What I ordered was the 8-kind sashimi set (small) for ₩54,000. It's a full table with 8 kinds of aged sashimi + special sauce + seasoned vinegar rice + gobchang gim (crinkly seaweed).
First out: bondaegi (silkworm pupa) soup, pancakes, fried squid and corn cheese

First came bondaegi-tang (silkworm pupae soup), assorted jeon (Korean pancakes), fried squid and corn cheese!

The pancakes were generous, and each one was a different kind, so it felt like ordering a whole separate side dish?! The kimchi jeon especially was so crispy and so good ..

And the fried squid surprised me by being so tender and plump. I've never had fried squid this thick and not chewy at all ..♥

A lot of places these days put only mayonnaise in corn cheese with no cheese, but this one was loaded with thick, nutty cheese, which I loved

Unlimited side dishes, sauces and mulhoe (cold raw fish soup)
The sashimi table came out quickly too!! The shocking part is that the skidasi (side dishes) at Hoepanjang Sangbong are unlimited refills ..

There was a seasoning made from myeongran-jeot (salted pollock roe), a variety of sauces, perilla leaves with ground perilla seed, white kimchi and sesame oil dip. So many sauces ⊹ ₊ ⸝⸝⸝ ♡

The mulhoe (cold raw fish soup) also had quite a lot of white fish and salmon in it, which I was happy about

There were also seasoned vegetables and gobchang gim, haha

Grilled rockfish and complimentary mussel soup
Grilled rockfish (bolak) came out too!! I couldn't believe how much you get for ₩54,000 for two, so happy

It was salty and great with drinks, and so rich and moist that my chopsticks kept going back for more ㅠㅠ

Mussel soup came out too, so there was nothing extra to order .. The mussel soup is complimentary~! It had plenty of bean sprouts, so it tasted like a hangover-cure clam soup?! haha It was so refreshing
Is Hoepanjang's aged sashimi really not fishy? Amberjack and salt-aged salmon
Still, the most dazzling part was the assorted aged sashimi ⊹ ₊ ⸝⸝⸝ ♡ Hoepanjang Sangbong says it brings in fish directly from the auction market every morning and ages each kind exactly the way that fish needs!

Amberjack (busiri), the savior of summer sashimi .. I love amberjack, but everywhere I went it had at least a little fishy taste. At Hoepanjang it wasn't fishy even by 0.00001, which was so amazing and great ⟡ᱸ⁎⁺˳ ♡.ᐟ.ᐟ

The yellow croaker-type fish (jeommseongeo) was rich and so delicious too ••

The greater amberjack (jaetbangeo) had a crunchy, firm texture and a clean, nutty flavor that was the best ♥

The salt-aged salmon was just .. omg .. it melts away

I wrapped it in gobchang gim, and the sunlight was so nice that I took one more photo .. ♡

The soju went down endlessly too ..^^ 🧚♀️
Verdict: would I go back for aged sashimi in the Sangbong food alley?
A truly great aged sashimi spot has appeared in the Sangbong food alley. Around 6 o'clock they were setting up the outdoor tables at Hoepanjang Sangbong, and I promised myself that when it gets a bit warmer I'll come back to hit the outdoor aged sashimi at dusk •• ♥
If you're looking for good aged sashimi in Jungnang, gather at Sangbong Station. They even say corkage is completely free with no limit, so it's perfect for stuffing yourself with great aged sashimi and plenty of your favorite drinks
