Mild pork bone stew piled with bean sprouts in Godeok: San Ppyeojjim

In short

San Ppyeojjim (산뼈찜) is a pork bone stew and bone soup restaurant on Tanhyeon-ro in Pyeongtaek, Gyeonggi, near Seojeongni Station. On a weekday around 4 p.m., two adults shared a small San Ppyeojjim (30,000 won) with extra bean sprouts and were struck by the mountain of sprouts, the large, tender pork spine bones and the rich, non-spicy broth. For anyone who prefers a mild pork bone soup to a fiery gamjatang (spicy pork bone stew), San Ppyeojjim is a satisfying choice.

I really love bone hangover soup (ppyeohaejangguk), but I prefer a rich, mild broth to the fiery, in-your-face style. So while searching for good restaurants in Godeok, Songtan and Seojeongni in Pyeongtaek, I found San Ppyeojjim (산뼈찜).

Having gone, I'd say it isn't just about big portions; it ticks all of these boxes:

The San Ppyeojjim arrives: first impressions

True to its name, the bean sprouts are piled up like a mountain, with big pork spine bones packed underneath. It came out after a short wait after ordering, and the first impression was truly overwhelming.

San Ppyeojjim's biggest feature: the bean sprouts

San Ppyeojjim piles on bean sprouts to a degree you rarely see at ordinary gamjatang places. Lightly cooked in the broth, the sprouts keep their crunch, and eaten with the meat they cut the greasiness. Having tried it, adding extra sprouts was a very satisfying choice.

Is the extra bean sprouts option (₩1,000) worth it?

If you like bean sprouts, I recommend adding extra at San Ppyeojjim. They stay crunchy and go well with the broth.

How much pork spine meat does San Ppyeojjim give you?

When I pushed aside the sprouts, big pork spine bones appeared. Each bone was sizable and had plenty of meat on it.

These are the big pork spine bones that were hiding under the sprouts. Even lifting them with tongs, you could feel the heft.

The tender texture, with meat that pulls apart along the grain at just a touch of the chopsticks, was impressive. The juicy, soft meat really stood out.

Looking for a non-spicy bone soup? Try San Ppyeojjim

The broth at San Ppyeojjim was less intense than ordinary gamjatang, with the deep flavor of a rich stock. Honestly, this is the main reason I visited. I like bone soup, but I don't care for broth that is too spicy or harsh.

Is San Ppyeojjim spicy?

From what I ate, San Ppyeojjim was not spicy. Even people who can't handle spicy food should be able to enjoy it without worry.

One spoonful tasted clean yet deep.

Even better with the special sauce

I dipped the San Ppyeojjim meat in the special sauce with Cheongyang chili peppers that comes with it. The sauce brought out even more of the mild meat's flavor.

This special sauce adds a savory kick. Eaten together with the bean sprouts, the texture and flavor get even better.

San Ppyeojjim with rice is the best combination

I picked the meat off the bones, put it on rice and ate it with kimchi. As expected, this is a dish that tastes even better with rice.
