The flounder fin ankimo is topped with chewy flounder fin (engawa) and creamy, savory ankimo (monkfish liver). The savory flounder fin combined with the sea tangle's bitterness and fragrance was so delicious.

It's special sushi so there's an extra charge, but it's my absolute favorite — I always order 2–3 plates whenever I come!!

The salmon jang (soy-marinated) sushi had clean, savory salmon with the saltiness of soy sauce added, making for a great sweet-and-salty umami flavor.

The flounder fin sushi has an engawa long enough to wrap all the way around the rice. The crunchy texture unique to flounder fin, and the savoriness that bursts with each bite, were truly the best.

The aged kimchi flounder sushi had a great balance of chewy flounder, sweet-and-tangy aged kimchi, and savory sesame oil.

The salmon onion sushi had a great texture from the soft salmon, crunchy onion, and popping flying fish roe, and the clean, savory salmon paired with the refreshing sweet sauce was delicious.

The raw shrimp steak sushi had a great balance of flavor and texture from the soft cheese, crispy garlic flakes, sweet shrimp, salty cheese, and spicy sauce. The subtle smoky char on top made it even more delicious.
