Sunday dinner at an Incheon pork BBQ: thick pork collar, Dwitgolmok
In short
Dwitgolmok Ddotgalbi Geomdan Main Branch is an aged Jeju pork BBQ restaurant in Dangha-dong, Incheon, 193m from Exit 3 of Wanjeong Station. On a Sunday evening four diners ordered two servings of aged Jeju special pork collar (160g), two of aged Jeju ddotgalbi pork ribs (180g) and the golmok doenjang stew (soybean paste stew) at 8,000 won, which came with two whole abalones plus shrimp and squid, while a staff member grilled everything over charcoal from start to finish. Even a guest who normally avoids pork collar agreed the thick-cut special collar is the dish to order at Dwitgolmok Ddotgalbi.

Sunday evening at Dwitgolmok Ddotgalbi: the dedicated meat-aging fridge
Four of us visited Dwitgolmok Ddotgalbi Geomdan Main Branch on a Sunday evening, and the place was already packed.

The first thing I noticed walking in was a dedicated aging fridge. Seeing them manage the meat separately, true to an aged-pork specialty restaurant, gave me confidence right away.

Being this full even on a Sunday evening, I could tell this was truly a word-of-mouth favorite among BBQ restaurants in Seo-gu, Incheon.
Dwitgolmok Ddotgalbi menu and what four people ordered

What surprised me most was that the two signature dishes are pork belly with the rib bone still attached and thick-cut pork collar.

Ddotgalbi (돗갈비) is Jeju dialect for pork ribs, and they said they only use pigs raised in Jeju's pristine areas — I was already looking forward to it!
- Aged Jeju pork collar (160g) x2
- Aged Jeju pork ribs (180g) x2
- Doenjang stew (soybean paste stew) ₩8,000
- Rice x3 ₩3,000
That's what the four of us ordered! Each table has its own charcoal grill, and they set up the fire the moment we sat down. I really think charcoal-grilled BBQ restaurants are the best.
Side dishes and the four sauces at Dwitgolmok Ddotgalbi

The side dishes that came out with the meat were more varied than I expected.

Melljeot (fermented anchovy sauce), a special sauce based on garlic and salted shrimp, wasabi, and salt — four sauces all served at once, so it was fun choosing between them. Garlic salted shrimp sauce was my favorite. A flavor you don't get at other BBQ restaurants!

Grilled aged kimchi and myeongi namul (wild garlic leaves) also came out, and the grilled aged kimchi in particular really cut through the richness of the meat.

The side dishes overall were mild and clean, so they never got in the way of the meat's flavor, and I kept reaching for them anyway. There was also fresh green onion salad served separately, and the crisp texture paired well when I put a bit on top of a piece of meat.

Even before grilling, it already looked delicious. The color and marbling had me excited the moment I saw them.

Aged Jeju special pork collar (160g): even a pork collar skeptic was won over
The staff grilled the pork collar first. It was truly thick and fresh.
Honestly, I'm not usually a fan of pork collar. Because of its dry texture I rarely order it, but the thickness here was different from the start.
They grilled the aged kimchi alongside it too. Having the staff grill everything from start to finish made things so easy. At other BBQ restaurants, even when staff grill for you, you still end up flipping pieces or keeping an eye on things — but here, the staff kept rotating through and watching the meat the whole time, which I really appreciated. Maybe that's exactly why the pork collar turned out so delicious...

The staff grilled it in a way that sealed in the juices, browning the outside while keeping the inside moist. It wasn't tough at all, and the juices kept coming with every bite — the best pork collar I've had. Even I, who doesn't usually like pork collar, was won over by this special-cut version.
Aged Jeju ddotgalbi (180g) is pork belly with the bone still on
The aged Jeju pork ribs are essentially regular pork belly served with the rib bone still attached. "Bone belly" is exactly the right way to describe it.
So the meat never stopped coming — as soon as the pork collar finished grilling, they started on the ribs. I got to watch the belly being grilled while eating truly delicious pork collar.
They said the pork is carefully selected and processed from Jeju's Dongbu Livestock, which raises pigs in the most eco-friendly way in the region's pristine areas.

Aged using a method refined over 10 years of know-how, the meat is packed with flavor and truly delicious soft juiciness.

Taking a bite with the well-grilled aged kimchi and Dwitgolmok Ddotgalbi's special sauce was genuinely delicious.

The raw ingredient itself is already good, and with the aging on top, the flavor was just insane...
Two whole abalones in the 8,000 won golmok doenjang stew
The doenjang stew we also ordered was ₩8,000, and it was truly excellent. My whole family agreed haha.

It's a broth simmered deeply, so it went well with the meat throughout — not salty, with a deep flavor.

There were two whole abalones like this in there. On top of that, shrimp, squid, and other seafood were generously packed into the stew.
