Bubyeokjeong began with the Pyongyang-style dumplings a grandmother made by hand for her husband, who was from Pyongyang; the name comes from Bubyeongnu (浮碧樓), a pavilion on the Taedong River in Pyongyang, with 'jeong (亭)' replacing 'ru'. Bubyeokjeong's signature Pyongyang dumpling soup holds five Pyongyang-style dumplings in a clear broth simmered for over an hour from 1++ Hanwoo beef with domestic dried ginseng, radish and jujube, served with house-made white kimchi. Bubyeokjeong grinds 100% mung beans in-house for its mung bean pancakes, and the menu also includes dumpling hot pot, dumpling jjabagi, Pyongyang plate dumplings, makguksu and a kids' dumpling soup.
Bubyeokjeong has a garden in front of the building, and the interior is finished in walnut, reclaimed wood and hanji paper. Bubyeokjeong sits near Heyri Art Valley, Paju Book City and Simhaksan Mountain, making it a convenient stop before or after an outing, and Bubyeokjeong offers misugaru slush and snacks free of charge.
