Doseulbak takes its name from 'doseul', a native Korean word for a packed lunch box, and as a fusion Korean dining bar Doseulbak serves Korean-based dishes alongside cocktails made with traditional Korean liquor. At lunch, Doseulbak builds its set menus around dakgomtang: a broth of chicken bones, chicken feet and vegetables simmered for more than 12 hours, given acidity with aged kimchi (mukeunji). The rice at Doseulbak is Sindongjin rice cooked with chicken fat rendered in-house from the chicken.
At dinner, Doseulbak serves a tasting menu built from ingredients that pair with Korean jang (fermented sauces and pastes), including pollock roe (myeongnan) canapés, chicken and water dropwort salad aged in soy sauce and kelp, perilla oil buckwheat noodles, Korean yam marinated in sesame oil with Hanwoo beef tartare, braised beef short ribs (galbi-jjim) marinated with pear and pineapple, and Spanish mackerel confit in doenjang oil. Traditional liquor pairing is available at Doseulbak, along with traditional liquor cocktails made from apples grown by the restaurant in Cheongsong. Seating at Doseulbak is a U-shaped bar for 20 guests, so diners can watch the chef cooking right in front of them.
