Where Doseulbak is: 5 minutes from Apgujeong Rodeo Station

Exterior of Doseulbak in an alley near Apgujeong Rodeo Station

Doseulbak is tucked away in an alley near Apgujeong Rodeo Station — about a 5-minute walk from Exit 5. The exterior already had that subtle, modern Korean flair. We drove there ourselves, and luckily found one parking spot right next to the restaurant.

Cozy lighting inside Doseulbak's interior

With its warm, stylish interior and cozy lighting, I thought it'd be perfect for a date, an early-stage romance, or bringing someone important.

Right as you walk in, a U-shaped open kitchen bar table welcomes you! You can watch the chefs cooking with real care the whole time, so there's never a dull moment during the meal.

What the 57,000-won dinner tasting course at Doseulbak includes

We ordered the Doseulbak dinner tasting course (₩57,000 per person). Being able to enjoy a course meal at this price right in the middle of Apgujeong felt like great value before we'd even started!

First dish of Doseulbak's dinner tasting course

First up was the green citrus basil fermented vinegar! The refreshing tang and subtle basil aroma gently woke up the palate haha, opening the course nicely.

Carefully plated canapé
So much care in every detail, it was touching.

Next came the asparagus / pollack roe scallop canapé. It's a finger food generously topped with salmon roe and sea urchin — the oceanic flavor and umami that burst out the moment it hit my mouth was outstanding!! Has asparagus always tasted this good? Both texture and flavor were on point!

Sous-vide chicken salad with water dropwort and cilantro

Next up, the sous-vide chicken salad had a texture so tender it barely felt like chicken. The fragrant water dropwort, cilantro, and special sauce blended together for a really clean finish with no greasiness!

Perilla oil makguksu topped with sweet shrimp

And then the hidden dark horse — sweet shrimp perilla oil makguksu (cold buckwheat noodles)! Watching the chef carefully roll the noodles on the side really added a sense of extra effort to the dish. The nutty perilla oil coated the noodles for extra chewiness, and paired with sweet shrimp, I couldn't stop reaching for my chopsticks.

Lemon plum highball ordered at Doseulbak

Honestly, I think Doseulbak would be best enjoyed slowly with various traditional liquors alongside the fusion Korean menu, chatting away — but since I went with my sibling and drove, I settled for sneaking in just one lemon plum highball. *You can check the drink menu via the QR code placed at your seat.

The highlight: oak-smoked hanwoo yukhoe (Korean beef tartare)

Finally, the highlight of Doseulbak arrived — the smoked hanwoo (Korean beef) yukhoe (beef tartare)! The staff performed the oak-smoking right at the table, and the smoke and aroma rising as the lid opened were like art.

Sea urchin and salmon roe add-on +₩10,000. Isn't the color gorgeous? Visually, this course dish was so appealing! Yukhoe + sea urchin + salmon roe, with a round dollop of mango purée in the middle. It was fresh, and the flavor balance was excellent.

The way to eat it is with rice and fresh hanwoo yukhoe on seaweed, paired unexpectedly with mango purée and perilla leaf. At first I thought, 'Mango with yukhoe?' but the burst of sweetness and the subtle oak-smoke aroma had insane chemistry with the savoriness of the beef! The crunchy combo of gungchae (stem lettuce) and cucumber was great too!

So pretty, one more shot! Haha

Cooking process at Doseulbak seen from the bar seat
Chef plating with tweezers

Thanks to the bar seating, we could watch the chefs' cooking process completely unfiltered, and honestly I couldn't help but take photos out of admiration for their care. There was a chef who looked like magician Choi Hyun-woo, plus two other handsome chefs and the floor manager — all kind and warm, which somehow made the food taste even better. Watching them plate each dish with tweezers, stitch by stitch, so professionally really boosted my trust in this restaurant.

Soy-aged Spanish mackerel confit and baekmuk-eunji chicken gomtang

Next was the soy-aged mackerel confit, so tender it fell apart at the slightest touch of a fork, with a subtle umami that completely erased any fishy smell.

That green on top is spinach purée — isn't it just so elegant looking! I kept marveling at it! Eating it in one bite with the sliced onion underneath the mackerel makes for an even better pairing!

One-bite combo of mackerel and sliced onion

The main dish, baekmuk-eunji chicken gomtang (chicken soup), had a broth simmered for over 12 hours, so it was clear yet rich and deep. Since the name includes 'mukeunji' (aged kimchi), I kept wondering where it was haha. It's fun to customize with cheongyang chili oil or garlic paste depending on your taste! I was nervous when they warned the garlic paste was really spicy, but it wasn't spicy at all — just added more umami, which I loved even more!

Dessert to finish: bavarois pudding

The final dessert, bavarois pudding, honestly surprised me by tasting better than what you'd get at a specialty dessert café. The pudding was as smooth as custard cream, with Earl Grey aroma and the tang of raspberry — it really rounded off the meal perfectly all the way to the last bite. My sibling tried it and their eyes went wide, saying they'd happily pay ₩12,000 for it at another café... they got so excited about it haha!

Is Doseulbak worth it, and what occasion suits it?

This is an Apgujeong Korean restaurant I can happily recommend to friends! Taste, hygiene, and hospitality were all spot-on. I've been to a lot of contemporary Korean dining spots, but this is easily one of the most memorable ones I've visited recently. The pacing of the dishes was just right, letting us relax and chat, and above all, the menu had broad appeal and great value for money!

This is the fusion Korean fine dining spot I'd want to introduce first to a foreign friend visiting Korea! It'd also work well for anniversaries, or dining with parents. If you want both great taste and atmosphere on a special day, definitely check out Doseulbak in Apgujeong!
