About

At Guigo, the owner receives the fish personally, cleans and ages it, and then grills it in a specially built oven. Guigo works with Norwegian mackerel, Icelandic rockfish, Russian Atka mackerel, flounder, and Korean hairtail and Spanish mackerel, taking the fish in as whole raw product and preparing it without thawing and refreezing. Guigo says the ageing process removes impurities to reduce fishy smells, and that it has spent two years refining its ageing method.

Besides fish, Guigo also serves fire-grilled bulgogi, so families with someone who does not care for fish can eat together at Guigo. Guigo sits down a side alley in Giheung-gu; you reach Guigo by walking past a self-service car wash.
