Haesong draws seawater directly from the sea off Jumunjin and keeps it circulating through its tanks to hold live fish, which are caught and prepared as soon as an order comes in. Haesong prepares each fish individually using the shinkejime (nerve-spiking) and ikejime methods, and says it inspects the auction-bought live fish itself every morning, choosing only undamaged ones. Haesong is a partner store of Ineogyoju Haejeokdan.
Haesong's mixed sashimi platters come in three types — single-style, omakase and premium — each available in several sizes. Haesong's omakase platter combines 4–5 seasonal and premium fish selected at that day's inspection with special cuts, and the special cuts can also be added separately in limited quantities. Haesong also presents set menus that pair a platter with snow crab (Bakdal daege) or red snow crab, grilled fish, and cold raw fish soup (mulhoe) or spicy fish stew (maeuntang).
