I had been keeping an eye on Choryang Hyeongje Galbi because its reviews had been so good, and I finally made it there. It really was one of those meat places that everyone in the know already knows about.

Inside, the space was small but nicely organized, and it absolutely had that energy of a true local favorite.

Looking at the menu, every grilled meat option—fresh ribs, pork ribs, pork belly, and fresh pork neck—was the same price: ₩12,000 per serving. After the meat, there were meal options including kimchi kalguksu (knife-cut noodle soup), cold kimchi noodle soup, seafood ramen, soybean paste stew, and steamed egg. I started by ordering two servings of fresh ribs, one serving of sweetly marinated pork ribs, and cold kimchi noodle soup to enjoy with the meat.

Along with a basket of fresh wrap vegetables, they even brought out slightly bitter wild ginseng. Before the meal had even started, I felt like I was being treated to something healthy? ^^

Their homemade green-onion kimchi and aged kimchi are good enough that they even sell them separately to take home, so you can imagine how tasty they are, right?

How I ate the juicy fresh ribs

Onto the well-heated grill went fresh ribs with a vivid rosy color, along with garlic, mushrooms, and kabocha squash. Fresh ribs can easily lose their juices and turn dry depending on grilling skill, but at Choryang Hyeongje Galbi, the owner and experienced staff carefully grill the meat themselves at every table. Golden and crisp outside! Moist and tender inside~ It cooks to perfection.

For the first bite of fully cooked fresh rib, I dipped it ever so lightly in salt, with no other seasoning. Not a hint of gaminess; the more I chewed, the cleaner and nuttier it tasted. Ahhh—this is it!!

Then I wrapped up plenty of meat with the sweet-and-tangy shredded scallion salad,

and alternated it with clean-tasting white kimchi. There was no chance for that rich, fatty meat flavor to build up, and I found myself eating it all so quickly without getting tired of it. Every single banchan (side dish) was a perfect match for the fresh ribs, so I could not put my chopsticks down.

Then I scooped up some fluffy, piping-hot steamed egg, and my whole insides seemed to relax as the day's stress just melted away.. ><

But isn't meat best with side dishes, too? Look at that cold kimchi noodle soup with little shards of ice floating on top.. haha I mixed it well, wrapped it around a piece of freshly grilled fresh rib, and ate it. The tangy, cold broth and savory meat... what more is there to say? The best.. Add one icy beer, bottoms up. I was really glad I had come to Choryang Hyeongje Galbi today.

Just as I was enthusiastically eating the fresh ribs, the owner came over at exactly the right moment and grilled the marinated pork ribs for us.

One piece of perfectly cooked pork rib~ Yes, yes, this is what properly made marinated pork should be. It was absolutely not artificially sticky and merely sweet like at ordinary rib restaurants. Instead, there was a restrained, gentle sweetness with this deep umami soaked right in. And the meat was so tender that it melted in my mouth after barely a few chews~~ I think it is the classic pork-rib flavor that anyone, regardless of age or preference, cannot help but fall for.

Next, I lightly warmed their homemade green-onion kimchi and nicely well-fermented aged kimchi on the grill, rolled them around the meat, and put it all in my mouth at once. Green-onion kimchi, white kimchi—the combinations were simply insane haha. You really have to try Choryang Hyeongje Galbi.

Then came soybean paste stew that was so generous I could hardly believe it cost ₩3,000..! The earthenware bowl was loaded without restraint with mushrooms, tofu, and mideodeok sea squirts, making for a refreshing yet deep broth. Of everything I had today, this is one you absolutely need to try.

Wow, even though I was full, I kept eating. From the fresh ribs to the marinated pork ribs, the owner grilled everything directly to the ideal doneness, so I could comfortably focus only on my meal. The side dishes were inexpensive but generous, and I ate so well.

Even though it is not in the heart of a flashy, busy district, I could see why it is popular in Choryang Galbi Alley based on nothing but its honest meat quality and flavor.
