Seomyeon Korean BBQ with kimchi stew: Gilchon Sutbul Galbi
In short
Gilchon Sutbul Galbi Seomyeon Main Branch is a Korean barbecue restaurant in Busanjin, Busan. We had a full plate of marinated pork ribs, a half plate of fresh ribs, truffle potato salad, cheddar toast, and kimchi stew with whole ribs. Verdict: a great pick for two people craving a seriously filling rib dinner.

Gilchon Sutbul Galbi Seomyeon Main Branch is where I go whenever I’m craving pork ribs in Seomyeon. From the banchan (Korean side dishes) to the fresh ribs, marinated ribs, and sides, everything is delicious—this is a truly good spot I’ve come back to again and again, so I really want to recommend it 🐖! The kimchi stew is especially amazing, so it’s an absolute must as a side ꒰ ⸝⸝ɞ̴̶̷ ·̮ ɞ̴̶̷⸝⸝꒱

Exterior and interior atmosphere

Gilchon Sutbul Galbi Seomyeon Main Branch is within walking distance of Seomyeon Station, Bujeon Station, and Bujeon Market, so it was easy to reach by public transportation! There’s no dedicated parking, so the closest paid option seems to be Lucky Parking Lot 🚗
The interior has a neat wood finish and pretty, soft lighting, making it lovely for dinner as a couple—and perfect for a wedding-invitation gathering in Seomyeon ˚ ༘♡ ⋆。˚ There are also seats inside where groups of eight or more can sit together! There are open seats like these too; I loved the unusual chairs and the dim mood. Such a good atmosphere for ribs and a glass of somaek, a soju-and-beer mix • • 🍻

A basic spread of 12 items comes out first, and you can pick up any extra side dishes you need from the self-service bar. If you follow them for Naver notifications, you can get a toast-and-cheddar coupon, just so you know 🍞
Our order: marinated ribs and fresh ribs

Options listed on the menu
- Meat: fresh pork ribs and marinated pork ribs / full plate 550g, large plate 800g, additional half plate 270g
- Meal dishes: dried shrimp doenjang-jjigae (soybean-paste stew) ₩2,900, jjageul kimchi stew ₩3,900, half-and-half naengmyeon (cold noodles) ₩6,900, aged-kimchi fried rice ₩5,900
There were two of us, so we ordered one full plate of marinated ribs and added a half plate of fresh ribs—and we were totally full. Both were so delicious that I recommend ordering a full plate of whichever kind you like better first, then adding a half plate ㆅ

The basic spread includes fresh scallion kimchi, potato salad, shrimp sesame-oil dip, salted seafood, white kimchi, pickles, and wrap vegetables. Every single thing was neat and tasty, making the meat even better . . 🥺

Especially the potato salad drizzled with truffle oil—seriously, ridiculously good. It’s tasty on its own before the meal, but later, when you order the toast and cheddar and pile this on with the meat? Actual heaven, for realㅠㅠㅠ A refill is essential.

There’s also a sweet house sauce for dipping the ribs, plus a seasoned onion sauce.

Before the meat arrives, read closely through the guide to enjoying the ribs 📖
- Shrimp sesame-oil dip
- Simmered meljeot (salted anchovy sauce)
- White kimchi + myeongi wasabi (wild garlic with wasabi)
- Grilled toast + cheddar cheese + potato salad

Charcoal-grilled marinated ribs
One full plate of marinated ribs. I always used to order the fresh ribs first, but this time I started with the marinated ones. The grills are different for the two kinds, so it doesn’t really matter which you order first. Just look at that color—they already look delicious...ᐟ.ᐟ

Because they’re grilled over charcoal, even the charcoal aroma that soaks into the meat is so good. They’re well aged, so they’re delicious even on their own.

Cheddar cheese and toast. This is an essential item I order every time I come to Gilchon Sutbul Galbi. That mala cream sauce in particular is insanely good . . 🌶️

Grill the toast a little, then top it with potato salad and meat and eat it all in one bite.ᐟ.ᐟ The kind of flavor that makes you keep eating meat forever . . You can get it free by following for Naver notifications, so please try it at least once 🥹

An additional half plate of fresh ribs
The additional half plate of fresh ribs.

The fresh ribs had a great balance of fat and meat too, so they were tender without being tough! They were delicious dipped in the shrimp oil sauce, and insanely good soaked generously in the meljeot sauce too⋯❤︎
Kimchi stew with whole ribs inside
And the side you absolutely have to have at Gilchon is, of course, the kimchi stew!!! You can add gimjaban rice, rice with seasoned seaweed flakes, when ordering it too. This amazing kimchi stew has whole ribs inside and is packed with meat. The portion is so generous that it’s enough to make two people burst-full 𓈒𓂂𓏸🤤

Mix it all into the gimjaban rice and it’s the best ₊˚⊹ 🍚 Even though we were full from eating so much meat, the two of us buried our faces in it and scraped the bowl clean . . I highly recommend the cheddar cheese and kimchi stew as sides.
