After finishing a round at Dongnae Benest CC with my family, we headed over to fill our hungry bellies. We had used up quite a bit of energy on the course, so we decided to properly recharge with delicious meat that day.

Sanseong Meat Shop Dongnae Main Branch: basics

It is on the first floor at 145 Myeongnyun-ro, Dongnae-gu, Busan, about 372 m from exits 1 and 4 of Dongnae Station. It is open from 12:00 to 22:30, with a break from 15:00 to 16:30 and last orders at 21:30. They operate without a break time on weekends.

You can use nearby Geonhui Parking, with one hour covered for free. It costs ₩2,000 for the first 60 minutes and ₩2,000 per additional 60 minutes; there are private rooms, group seats, paid corkage, and a grilling service.

The big “Sanseong Meat Shop” sign was visible from afar, and the meat display styled like a butcher shop immediately made it feel like a true meat specialist.

There was a waiting area in front of the restaurant, so you could wait comfortably, and a large menu by the entrance made it easy to look things over in advance.

Inside, the warmth of a traditional hanok (Korean house) blended with the stylish feel of a butcher shop in a really distinctive way. With private rooms and group seating available, it looked great not only for family dinners but also for company gatherings.

Makgeolli bottles placed around the room caught my eye like décor. Apparently, the name “Sanseong Meat Shop” combines sanseong, meaning fortress—after Dongnae Fortress—and sigyukjeom, meaning butcher shop. They age pork with traditional nuruk fermentation starter and reinterpret local specialties and traditional dishes from Busan and Gyeongnam in their own way. Since I am a Busan native too, I felt extra attached to a place that captures Dongnae’s local character and stories. 💛

Instead of plain bowls of rice, they serve buckwheat pot rice and barley rice. They said it was a choice meant to bring out the meat’s flavor even more, and that felt like another Sanseong Meat Shop touch. Write a receipt review and you can get pork rind or makgeolli for free.

Even the basic spread was artistic. For a sauce fiend who dips absolutely everything like me, it was such a happy lineup! 😆 There were plenty of sauces and accompaniments for the meat: nuruk gochujang pickles, wasabi, salted hairtail guts, nuruk ssamjang, herring roe jeotgal, and shiitake wasabi.

From shredded radish salad to pickles and acorn jelly, every side dish that came out was a winner. But the one that hit my taste buds right in the bullseye was the green onion mayo(?) green onion cream sauce! With my totally kid-like palate, it was exactly my thing, so I kept dipping the meat into it.

Wait… beef-and-radish soup comes as a basic side dish?!!! 😂 I thought it would just be a little taste, but the portion was generous, and I was surprised that each pair of diners got its own ttukbaegi (earthenware pot).

The hot, spicy broth was packed with substantial pieces of beef and radish, so it felt like a proper meal all by itself. It was especially perfect for warming up your stomach before getting into the meat.

Maybe because my parents are from Daegu, our family is absolutely crazy about Gyeongsang-style beef-and-radish soup. 😂 Dad had a whole pot before he even started on the meat, then ended up helping himself to ours too, haha. I love the soup too… but I gladly gave mine up in hopes of stealing another piece of meat. ^^;;

We ordered Pork Set C. At ₩97,000, it includes 350g of pork belly, 350g of nuruk pork neck, and 200g of today’s special cut! At 900g in total, it was a generous amount for the family to share.

They grilled the nuruk pork neck first. It is Sanseong Meat Shop’s signature, fermented and aged with Sanseong makgeolli and dried godubap—steamed rice nuruk—from Geumjeongsanseong Village.

And Sanseong Meat Shop’s grilling service was seriously impressive. I had assumed it simply meant a staff member grills the meat for you, but they explained each cut and how it had been aged as they cooked. They also thoughtfully checked throughout the meal to see whether we needed more side dishes or anything else, so we could dine comfortably.

The staff member told us nuruk pork neck is delicious dipped in seaweed salt, wrapped in aged kimchi, and topped with wasabi, so I did exactly as instructed. But what is this combination…? Major props to the staff member’s food knowledge~~

The nutty pork neck, tart aged kimchi, and sharp wasabi came together so it never felt greasy—I just kept reaching for more. I usually never order pork neck at barbecue places because it can seem dry, but this nuruk pork neck was springy, moist, and still full of juice. I honestly thought, wow, pork neck can taste this good…

They diligently grilled garlic and garlic scapes alongside the pork belly too. I felt a bit sorry because I think I kept interrupting the grilling to take photos, but they cooked it so calmly and professionally anyway. They moved the finished meat to a mini brazier, so we could keep it warm until the end. Just look at that gorgeous meat color~

The pork belly that followed was Sanseong Meat Shop’s cross-aged pork belly, trimmed with a bone attached like LA galbi. It was cut thick, and even the sight of it grilling, full of juices, looked amazing. Topping the pork belly with salty herring roe jeotgal and sweet-tart shredded radish salad balanced its rich flavor perfectly. My personal favorite, by the way, was piling herring roe jeotgal onto the green onion mayo too. Salty, nutty, rich… totally the kind of flavor that sends your blood sugar soaring, haha.

Today’s special cut was gabrisal, or pork cheek. They say only about 200g comes from one pig, making it a precious cut; its chewy texture was different from pork belly, and I kept finding myself reaching for it.

They called it a “castella rolled omelet.” They pour egg mixed with milk around the edge of the grill, then roll it into soft, moist, fluffy layers like castella cake. Even while watching it happen right in front of me, it was so fascinating that I kept staring, wondering, can this really work?

I had never seen anything like this! As soon as my mom saw it, she said, “It looks like a Mont Blanc omelet.” It was so clever that I wondered how anyone came up with this idea. 👍🏻

It was warm and mild, and even though we were already completely full, we kept eating it as a drinking snack. And you know how people say eggs are good for a hangover? Sanseong Meat Shop was looking after our health too ♥ (Sanseong Meat Shop: Who are you...???)

Then the staff member asked whether they could remove the grill. Our stomachs felt like they were about to burst, but we were sad to let it go just like that, so we ended up ordering pork rind too. The final struggle of people who are full, you could say…

They warned us in advance that grease might splatter, but I did not even move away and not one bit splashed on me. Is that a grilling skill too~? Haha. The dipping sauce for the pork rind was really unusual too: a sriracha mayo soy sauce with soybean powder. It was nutty, spicy, and salty, and such a perfect match for pork rind. The owner must be a true food genius,,!,,!

Meanwhile, my mom said that even serving cola in a PET bottle was proof this was the real deal, haha.

For our meal, we ordered freshwater shrimp doenjang sulbap (rice in soybean-paste broth), and I was a little surprised because it looked exactly like the menu photo!! The savory doenjang broth was not salty at all, and the freshwater shrimp gave it a clean yet deep flavor. But the portion is seriously, seriously huge,,,,!!!!

We were truly on the verge of bursting, but… we had to have noodles too. We added Busan-style buckwheat noodles, and even the cold noodle soup looked more appetizing served in such a pretty bowl. The clean, chilled broth and mild noodles freshened up our mouths after all that meat. It was not overly seasoned, making it just right as the final dish.

How it felt as a family dinner

Our family usually prefers pork belly restaurants where someone grills the meat rather than doing it ourselves, and Sanseong Meat Shop’s grilling service was truly satisfying. They cooked everything deliciously for us, and the meat itself was high quality, so everyone in the family enjoyed it.

When we paid, I noticed that Sanseong Meat Shop also sells gift certificates. They come in ₩10,000, ₩50,000, and ₩100,000 denominations, and with the Chuseok holiday approaching, I thought they could make a nice holiday gift for parents or friends who love meat.

It is close to Dongnae Station for easy access, and the private rooms and group seating make it a good choice for family meals or gatherings too. We came with family this time, but I thought it would be great to come back with a group next time! 😆

My dad was getting nagged by his daughters for watching baseball throughout the meal, but he was very happy too—there is parking, the meat is grilled for you, and he said he should hold a get-together here with his hometown friends. Meanwhile, there he was, a Samsung Lions fan watching baseball out on the street. ⚾️ It is not because I am a Lotte Giants fan and jealous… (It is.)
