Ilsan hangover ramen shop: two classic-broth bowls compared at Gyedan
In short
Gyedan Ramen Ilsan Main Branch (계단라멘 일산본점) is a tonkotsu ramen shop on Bamlidan-gil, along Yulcheon-ro in Ilsan, Goyang. The day after drinking two and a half bottles of soju, the writer joined the Catch Table remote waitlist, ordered both the signature Gyedan Ramen and the motsu ramen in the classic broth to compare them, and added a 3,000-won tamago rice bowl. Verdict: if you can only pick one bowl at Gyedan Ramen, choose the motsu ramen topped with grilled makchang (beef intestine).

Today I'm introducing a ramen place that I ate at as a seriously great hangover cure recently. Gyedan Ramen is already famous among Ilsan locals, haha. I actually visited it right after I moved to Ilsan. So where is it? It's Gyedan Ramen, the Ilsan ramen favorite!

How do the waiting line and parking work at Gyedan Ramen Ilsan Main Branch?
Gyedan Ramen Ilsan Main Branch now takes remote waitlist spots on Catch Table. When I visited last time there was no Catch Table, so I had to stand in line and wait in person, but this time I got in conveniently with the remote waitlist, haha. Check the app before you go, everyone!
By the way, Gyedan Ramen only has three parking spaces, so it's a parking war T_T The car kept circling and circling... I'd recommend walking or public transport if you can! Otherwise, you can use the Jeongbalsan Park public parking lot next to Madu Library, across the intersection from Gyedan Ramen!

Seating inside Gyedan Ramen and table turnover
The inside of Gyedan Ramen isn't big. There are bar seats along the wall, where solo diners and parties of two mostly sat, and groups of three or more were guided to tables. Still, the food comes out fast and noodles are quick to eat, so turnover is good! I waited 10 minutes with 3 groups ahead of me, haha.

What I ordered at Gyedan Ramen on Bamlidan-gil
At Gyedan Ramen, a Bamlidan-gil favorite, I ordered these three things.
- Gyedan Ramen
- Motsu ramen
- Tamago rice (다마고밥)

The food came out really within 5 minutes...? Right away, haha. Yay. It was perfect timing for me, since I couldn't stand the hunger. The pickled radish and kimchi were set out first!

Gyedan Ramen vs motsu ramen, the full showdown. Let's start!

What does the signature Gyedan Ramen taste like in classic broth?
Gyedan Ramen is the most basic and signature dish at Gyedan Ramen Ilsan Main Branch. You can choose between classic broth and rich broth, and I wanted to stick to the basics and taste the base, so I chose classic for both ramens, haha.

It's a plain, as-is bowl: creamy white broth, nicely grilled chashu (braised pork slices), a soft-boiled egg and wood ear mushrooms. But? The moment I took one spoonful of broth, I went "ahh, this is it....." haha. I'd drunk two and a half bottles of soju the night before, and it all went down in one go.... haha.
I don't like thick noodles, and Gyedan Ramen's noodles are moderately thin, so they suited my taste perfectly. The chashu was really thick, so we split it in half.

Add spicy sauce to turn it into karai ramen
Once you're about halfway through Gyedan Ramen, you can stir in the spicy seasoned sauce (다대기, daegi) and enjoy it as a spicy karai ramen! But add it in moderation. That sauce is seriously hot. Even with just the amount I put in, it got spicy fast. Being able to enjoy it half and half is totally great!

How is the grilled makchang motsu ramen different from Gyedan Ramen?
Motsu ramen is Gyedan Ramen with grilled makchang (beef intestine) on top. Honestly, I'm Team Motsu, haha. How good is grilled makchang? It's grilled crispy, almost fried, yet the inside is really chewy.

The broth of the motsu ramen carries a faint makchang aroma, and it's not a funky smell at all, just a rich, nutty fragrance. The chashu was the same as in Gyedan Ramen. If I had to pick just one of the two, motsu ramen wins!

The soft-boiled egg was cooked beautifully soft too. It's seasoned well, so it isn't bland, and I enjoyed it a lot.

The ₩3,000 tamago rice and how to eat it
Tamago rice is a rice bowl topped with egg strips and pork, and it costs ₩3,000. Rice, pork and egg all on top for ₩3,000 seems not bad at all. I'd recommend it to anyone who isn't satisfied with just one bowl of ramen, haha.

They say it tastes best if you scoop up a spoonful like this and lightly dip it in the ramen broth. So I copied that, and yep, delicious. It can't not be good.... Eaten moist like that, it kept going down even though I was full, haha.

Can you drink alcohol at Gyedan Ramen?
Gyedan Ramen sells highballs and beer too! The hangover cure worked thoroughly... but then I started craving a nice cold beer, so it was a close call, haha. Next time I'd leave the car at home and have a quick beer.
