How the CatchTable waiting list works at the door
There's a catch table (waitlist kiosk) out front, so waiting is easy.

This place was selected as a 2026 Blue Ribbon restaurant. Apparently it's been running as a tonkatsu shop in Geomdan, Seo-gu, Incheon for over 10 years. Impressive…

Inside HOKATSU: self-bar and high chairs for babies
We went in right as break time ended!! The interior was clean and pleasant.

They even had baby chairs!

At the self-bar there were aprons, plates, and all sorts of side dishes.

Yogurt dry-aged pork and what's on the HOKATSU menu
You order and pay via the kiosk at your table. Plus, they age the tonkatsu using a homemade yogurt dry-aging method!! Apparently the lactic acid bacteria in the yogurt break down the protein in the meat, making it more tender while keeping the juiciness rich and the flavor clean.

There were also 1-person and 2-person set menus available.
The main menu had loin katsu, tenderloin katsu, and cheese katsu, plus a menu where you can have all three at once. There was also a gyukatsu (beef cutlet) menu you grill yourself over a brazier.

They also had ramen and curry, and side menus included plain tonkatsu and various fried items!! Drinks and alcohol are available too.

Homemade honey yogurt served before the meal
The homemade yogurt served before the meal. Apparently it has natural honey inside.

Maybe because it's homemade, it barely had any sourness and was so good!

Popular 3-katsu set: two pieces each of loin, tenderloin and cheese
I chose the popular 3-katsu set and the spicy tonkotsu ramen.
The popular 3-katsu set: loin, tenderloin, and cheese, two pieces each, evenly served, so no need to agonize over what to eat. Haha. It also came with two side dishes, cabbage salad, rice, and wasabi to dip in the broth.

The tonkatsu sauce was set up on the table, so you could pour as much as you wanted.

First bite of the tenderloin katsu!! The color was insane…🥹 They even drizzled truffle oil on top.
Truly tender and savory. Full of flavor. The breading isn't the least bit greasy, it's crispy and delicious. Seriously so good, ugh.

And then the loin katsu.
The loin katsu was just as tender as the tenderloin, and especially the fatty part attached to it was chewy and delicious.
The cheese katsu stretching out is insane… the cheese inside kept that distinctive cheesy softness and savoriness, so good!!

How spicy is the spicy tonkotsu ramen?
The spicy tonkotsu ramen.

Piled high with bean sprouts on top, one whole seasoned egg tucked in, and two pieces of grilled chashu (braised pork belly) on top too. The seasoned egg — need I say more, so good. Haha. The chashu had zero pork smell, sweet and tender.
The noodle portion is really generous too…👍 It's called spicy ramen but it wasn't as spicy as expected, actually in a good way. It's just spicy enough to go well with tonkatsu. The broth wasn't overpowering, more on the light side, and I liked that!!

Final verdict: who will enjoy HOKATSU
From the homemade honey yogurt starter to the tonkatsu and ramen, everything was delicious at this Blue Ribbon-selected tonkatsu restaurant in Geomdan's new town. The interior is clean and comfortable, so it's good for families, and would also work well with friends or a date. If you're looking for a great tonkatsu place or Japanese ramen restaurant in Geomdan, Incheon, I'd say HOKATSU is worth a visit. Recommended!
