Myeoljeot dip and juicy pork belly in Okjeong, Yangju: Mat Chandeul

In short

Mat Chandeul Wang Sogeum Gui Yangju Branch is a samgyeopsal (grilled pork belly) restaurant in Bujaro Tower on Okjeongdong-ro 7da-gil, Yangju, Gyeonggi. On a weekday evening, three servings of pork belly were grilled from start to finish by the staff, and following the table sign titled 'Misunderstandings and truths about undercooked pork', the meat was left juicy rather than grilled dry. With grilled salted shrimp, bubbling myeoljeot (anchovy sauce) dip and 2 hours of parking at both the ground-level public lot and the basement lot, it was a meal hard to fault.

Today I want to introduce a place where you can enjoy real, juice-bursting pork belly without having to grill it yourself — Mat Chandeul Wang Sogeum Gui Yangju Branch (맛찬들왕소금구이 양주점). After a weekday evening visit, I fully understood why this place is known as a top samgyeopsal spot in Okjeong. Here's my honest review!

Parking at Mat Chandeul in Okjeong: 2 hours at the public lot or the basement lot

Mat Chandeul Wang Sogeum Gui Yangju Branch has both a ground-level public parking lot right next to the restaurant and a basement lot in the building (Bujaro Tower) — and both offer up to 2 hours of free parking. Parking is always the first thing I think about when visiting a restaurant. The Yangju branch has a clean, eye-catching exterior that's easy to spot, and the parking situation was genuinely excellent too.

Both the ground-level public lot and the basement lot offer up to 2 hours of parking support, so if you're driving, you can enjoy your meal without worrying about parking fees.

The table sign on misunderstandings about undercooked pork

After sitting down, looking through the menu and ordering samgyeopsal for three, I noticed a really interesting sign on the table. It was titled 'Misunderstandings and Truths About Undercooked Pork.' We usually think pork has to be cooked through completely to avoid parasites, right?

Why Mat Chandeul does not grill the pork belly dry

But according to this sign, since modern hog farming switched to feed-based systems, no pork tapeworm larvae have been found in domestic pigs. So, just like beef, experts say pork also has better texture and deeper flavor when cooked to a moderate doneness rather than charred through. Reading that the restaurant serves top-grade chilled meat and works to grill it to its most delicious state made me even more excited to taste it.

Soon after, neatly arranged banchan and fresh lettuce wraps were set on the table. The pickled vegetables and seasoned dishes paired with the meat really got my appetite going. And then the pork belly for three arrived! The thick cut and vivid pink-red color made it obvious this was top-grade meat.

Staff grill and cut the meat from start to finish

Once the grill reached the right temperature, the pork belly for three went on. One of this place's biggest strengths is that the staff grill the meat completely, start to finish! While the meat cooked, we just chatted comfortably with each other — no scrambling to manage the grill ourselves, which was incredibly relaxing. The way the staff member flipped the meat right when the surface turned golden brown was seriously skillful.

The staff member cut the meat into even, bite-sized pieces and flipped it again to cook evenly. On one side of the grill, they also grilled salted shrimp and kimchi together. Once done, the pork belly was stacked neatly on a small warming plate so it wouldn't overcook and turn tough, while staying warm and not burning.

The first juicy bite of medium-cooked pork belly

Once the meat was fully cooked, the staff member combined it with different banchan on four pieces so we could try various flavor combinations for the first bite. The moment I put one in my mouth, I gasped in delight. Honestly, even though I'd read the sign, I still had a tiny bit of hesitation about meat that wasn't completely charred through.

But eating the moderately cooked meat, grilled exactly right by the staff member, the juice burst in my mouth with every bite, and the signature savory pork flavor was maximized — it was genuinely delicious. It had a moistness you could never get from meat that's been dried out from overcooking!

Wrapping the grilled meat in a big lettuce leaf with fresh vegetables was delicious too. But piling on the 'grilled salted shrimp' that had been cooked right on the pan with the meat was an amazing treat. Its savory saltiness cut right through the meat's richness. Dipping the meat into the anchovy sauce (멜젓) that had been simmered bubbling on the grill was also a perfect match, with its distinct deep, savory flavor.

Who should eat samgyeopsal at Mat Chandeul in Okjeong

This was a satisfying meal where I could enjoy expertly grilled meat from start to finish without lifting a finger, and taste the true, juice-packed flavor of top-grade pork. Between the excellent meat quality and the generous parking, it was hard to find any downsides.
