Seomyeon noodle shop, a mul fan won over by bibim: Seomyeon Milmyeon

In short

Seomyeon Milmyeon (서면밀면) is a milmyeon (Busan wheat noodle) restaurant in EOS Plaza, Seomyeon, Busanjin-gu, Busan, a must-visit on many Busan trips that also draws plenty of foreign travelers. Arriving just after the lunch peak, two diners ordered mul milmyeon (noodles in cold broth), bibim milmyeon (noodles in spicy sauce) and mandu. The lightly peppery broth served in a kettle, the chewy noodles and a bibim sauce that isn't heavy changed the mind of a devoted mul milmyeon fan. Seomyeon Milmyeon is a Busan milmyeon spot that satisfies mul milmyeon lovers and bibim skeptics alike.

Seomyeon Milmyeon: where I went for milmyeon on a Busan trip

Seomyeon Milmyeon (서면밀면) is a milmyeon shop in Seomyeon, Busan. I went because I wanted to eat proper milmyeon, the dish you simply have to try on a Busan trip. A few foods always come up when people talk about eating in Busan: pork soup rice (dwaeji-gukbap), seed hotteok (sweet filled pancake), raw fish, and, for me personally, absolutely not to be left out, milmyeon (wheat noodles).

It's a familiar food for Busan locals, but visitors almost always want to try it at least once. So this time I decided to go to a proper milmyeon place, and that place was Seomyeon Milmyeon.

Is Seomyeon Milmyeon still crowded after lunch?

I went a little after lunchtime and it was still really busy. It's such a famous place that I'd heard the name a lot, and I finally made it. I assumed it would quiet down once the lunch peak passed, but when I arrived there were far more people than I expected.

It's in Seomyeon, so it's easy to get to. It slots nicely into a travel itinerary, and it's a perfect spot for a meal while you explore Seomyeon. Seeing people keep streaming in as soon as I got to the front made me even more excited.

Ordering at Seomyeon Milmyeon is by kiosk

Getting in was simpler than I expected. You order at the kiosk by the entrance, and once you've paid, a staff member shows you to a seat. I like this kind of system these days, since you can take your time looking through the menu.

The atmosphere at Seomyeon Milmyeon, popular with foreign travelers

What struck me most was the crowd. There were lots of Korean customers, but also a lot of foreign travelers. I heard English at the next table, and Japanese and Chinese from other corners. No wonder it's called a must-visit on a Busan trip. There's a reason so many people come, whatever their nationality.

The interior was quite spacious. Many famous restaurants cram tables together, but Seomyeon Milmyeon has plenty of seats and an open, airy layout. It looked comfortable for groups and travelers alike.

After some deliberation, we went with the classic combination: 1 mul milmyeon (cold broth noodles), 1 bibim milmyeon (spicy mixed noodles), and mandu (dumplings) too!

What does the kettle broth at Seomyeon Milmyeon taste like?

The broth comes generously in a kettle, and it has a clean taste with a subtle hint of pepper. Honestly, I'm someone who normally doesn't eat bibim milmyeon. When I eat milmyeon I'm almost always team mul. So that day I planned to let my companion eat the bibim while I stuck to the mul, but in the end my mind was completely changed.

After we ordered and waited a bit, a staff member first brought over broth in a kettle. This was another fun point about Seomyeon Milmyeon. Instead of serving it in a small cup, they give you a generous kettle so you can pour as much as you want.

I took one sip and it was a little different from ordinary broth. There's a faint peppery note, and it's weirdly addictive. Clean, savory, and it really opens up your appetite. I drank several cups before the noodles even arrived. If you love broth, you'll probably keep refilling this.

Mandu at Seomyeon Milmyeon: a side dish, but a big portion

I thought the mandu would just be a side, but the portion was sizable and I was really satisfied. When it first came out I wondered, is this really a side?

The wrappers are chewy and the filling is packed, so the texture is great. Bite in and you feel the moist filling, and eaten with the milmyeon the combination is really good. Especially with the bibim milmyeon, the spicy sauce and the mandu go well together. There were two of us and we got quite full.

Mul milmyeon at Seomyeon Milmyeon: chewy noodles and cold broth

The mul milmyeon had ice floating in it and plenty of toppings, so it looked refreshing from the first glance. Just seeing it felt like proper summer food.

I tried the noodles first and wow. I was reminded why so many people love milmyeon. The noodles were really good. Chewy but not tough, with a springy texture that kept me going back. Together with the broth it's clean and cold, and after one bite I stopped thinking about the hot weather. The broth itself isn't harsh and is the kind you keep spooning up, so it never felt heavy.

Even if you don't like bibim, is the bibim milmyeon worth trying?

The bibim milmyeon here isn't heavy on the sauce and is well balanced, so even I, a mul-team person who normally skips bibim, kept stealing bites. Honestly I rarely eat bibim. It's often too intense or all about the sauce, so I always pick the cold broth version.

But the bibim at Seomyeon Milmyeon was different. The sauce isn't as heavy as I expected and it's well balanced. Spicy and savory, but not overly hot or sweet. Above all, it paired really well with the noodles. So in the end I kept stealing the bibim too;; I felt that even people who usually don't like bibim should try it once. If anything, I'm torn about which to order next time.

Why Seomyeon Milmyeon is worth a milmyeon stop on a Busan trip

Seomyeon Milmyeon isn't just crowded because it's famous; the food itself is really satisfying. From the kettle broth to the chewy noodles, the unexpectedly delicious bibim milmyeon, and the generous mandu, it all worked together.

I also understood why so many travelers come. It's the kind of place you go when you think, I'm in Busan, I want a meal that feels like Busan. Personally, it's a place where mul lovers will be happy and people who don't like bibim might change their minds. So if I visit Busan again, I'll stop by again.

If you're planning a Busan trip, it's a good spot to add to your Seomyeon schedule. Having eaten there, I get why people of every nationality come. If you're wondering about milmyeon as a must-do on your Busan trip, I recommend Seomyeon Milmyeon ^_^
