This is Namsogwan U Yuk Dosakmyeon.

Unlike ordinary noodles, dosakmyeon (knife-cut noodles) are made by shaving dough right off the block with a knife, giving them a uniquely chewy, satisfying bite — paired here with a deep, long-simmered broth that doesn't disappoint.
