I went to Sinchon Yangpuni Seomyeon Main Branch (신촌양푼이 서면본점), a braised rib restaurant in Seomyeon, Busan, and had the braised ribs with half a jumbo octopus added on top! It's not in Sinchon, Seoul, but in Seomyeon, Busan, haha. According to the restaurant's introduction, it has been serving braised ribs in the same spot for 20 years. It's also not a chain, but a restaurant run in Seomyeon, which stood out to me.

Four spice levels and how to eat the braised ribs
The braised ribs (galbijjim) at Sinchon Yangpuni Seomyeon Main Branch can be adjusted up to 4 spice levels. If you want a different spice level from your companions, you can apparently ask for a separate spice sauce, haha.
Oh! I'm not great with spicy food, so an option like this is really nice, haha. If you can't handle heat, check the spice level when you order. There's also a picture guide to eating the ribs, haha. You put the braised ribs and onion pickle on a perilla leaf and add mayo sauce. I usually wrap ingredients together like this anyway, so that day I piled everything on at once, just as the guide showed.

Braised ribs for two with half a jumbo octopus added
At Sinchon Yangpuni Seomyeon Main Branch, we ordered braised ribs for two and added half a jumbo octopus. A very big octopus sits on top of the pot, with bean sprouts, vegetables and braised ribs underneath.
I was going to have just the ribs, but I wanted to try the octopus too, so I went for it. With the octopus sitting there whole, the pot looked completely full. Unlike eating only braised ribs, being able to eat the octopus as well was a plus.

Do staff cut the octopus and ribs for you?
At Sinchon Yangpuni Seomyeon Main Branch, a staff member cuts the jumbo octopus into bite-size pieces. They also took the bones out of the ribs so they were easy to eat.
It was convenient not having to deal with a whole octopus myself.

Since you don't have to spend time pulling the meat apart yourself, I think it would be easy when eating with several people too.

How did the ribs and octopus taste in perilla leaf wraps?
The braised ribs at Sinchon Yangpuni Seomyeon Main Branch had the bones removed, so they were easy to eat, and the jumbo octopus was plump and chewy! Adding octopus to the braised ribs meant two kinds of ingredients in one pot.
Now let's eat the ribs and octopus together! Cut into bite-size pieces, we wrap them in perilla leaves, haha. You also get bean sprouts and vegetables, so I kept picking different ingredients in turn. Wow... it was crowded, and now I see why.

On my way out after the meal, I grabbed a last candy too, haha. After that little mouth freshener, it finally felt like the meal was really over.
Verdict: sharing octopus braised ribs in Seomyeon
At Sinchon Yangpuni Seomyeon Main Branch, a braised rib restaurant in Seomyeon, I had braised ribs for two with half a jumbo octopus added. The octopus sits big on top of the pot!! And the staff cut up the octopus and ribs, so we could eat comfortably.
I also remember the four adjustable spice levels and the way of eating the ribs in perilla leaves with onion pickle and mayo sauce. If you're looking for braised ribs in Seomyeon, I really recommend Sinchon Yangpuni Seomyeon Main Branch. It's a place I'd recommend to anyone who wants to add octopus to braised ribs and share it.
