Korean beef short ribs & gamtae kim wraps in Hwaseong: Dorimgwan
In short
Dorimgwan Hyangnam is a Korean beef restaurant in Hyangnam-eup, Hwaseong, Gyeonggi, serving a table built around Muan, South Jeolla specialties. The writer grilled 500g of red clay garlic marinated flower short ribs (hwangto maneul sobaetsal yangnyeom kkotgalbi) over charcoal and wrapped it with gamtae (dried sea lettuce), chilgejang (raw crab in soy sauce), and onion kimchi, then added a portion of pork belly and bibim naengmyeon. A whole crab dropped into the complimentary doenjang jjigae made the value even better.

Your food-obsessed correspondent has dug up another gem today 🤤 Honestly, I went back and forth a million times on whether to write this one up. I've been to plenty of famous beef rib places across the country... and wow, this one was genuinely, seriously better.
It's barely known yet, which is a little heartbreaking but also kind of relieving — because once it blows up, I'm scared I won't be able to get a table anymore, ha. But good things deserve to be shared. The star of today's post is Dorimgwan Hyangnam, a Korean beef restaurant that brings the flavors of Muan, South Jeolla, straight to Hyangnam, Hwaseong!

The 'You'll regret driving past this beef rib place' sign and a parking lot the size of a playground
Driving along the road, one bright yellow sign practically shouts at you: 'You'll regret driving past this beef rib place!!' I wondered how confident you'd have to be to put that on your sign — but by the time I left, full and happy, I was nodding along in total agreement.
Best of all, there's a huge dedicated parking lot both in front of the restaurant and around the back, big as a playground, so parking stress is zero. Nothing kills the mood before a company dinner or family gathering like circling for parking, but here you pass with flying colors the moment you pull in.

Near the entrance there's also a spacious terrace lounge where you can chat in the sun. Perfect healing spot for grabbing a coffee after the meal and swinging gently on the porch swing.

Great atmosphere for company dinners and group gatherings in Hyangnam
Stepping inside, the ceilings are refreshingly high, so there's none of that stuffy, smoke-trapped feeling you get at some Korean BBQ places. Every table has wood partitions for privacy, and there's a separate long group table in the back that easily fits a big party — book this for a Hyangnam company dinner and you'll definitely get praised for the choice.
One wall is covered edge to edge with delivery invoices from beef suppliers all over the country, which gave off strong 'we never compromise on sourcing' energy from the owner. Just seeing that sheer volume was enough to convince me this place is the real deal.

They carefully tied a disposable apron on me so nothing would splatter on my clothes, and we got down to business.
A full table of South Jeolla Muan specialties
Dorimgwan's real identity is this 'table of Muan, South Jeolla specialties.' There's the beef flower ribs enriched with pineapple and Muan red clay garlic, the MSG-free onion kimchi fermented with fruit, chilgejang made from raw crab caught in pristine mudflats, wild gamtae, and even eco-friendly snail rice grown without chemical fertilizer! Seeing actual sacks of Muan snail rice stacked by the entrance really built my trust in how good the rice would taste.
Even the water isn't plain bottled water — you get barley tea in a bottle as standard. Little details like this really put you in a good mood before eating. Cool and nutty, it was perfect for wetting your throat before diving into the fatty meat.

The Muan trio — gamtae, chilgejang, and onion kimchi
As soon as you sit down, the standard South Jeolla-style side dishes get laid out on gold brassware, looking like they belong at a fancy hanjeongsik (Korean set-meal) restaurant. The real hook here is Dorimgwan's 'Muan trio' — gamtae (sea lettuce), chilgejang (raw crab in soy sauce), and onion kimchi. Honestly, this combo is insane. The deep umami of the chilgejang, the fragrant gamtae, and the sharp, refreshing onion kimchi worked together so well that I tried the regular ssamjang (dipping sauce) once out of habit and never touched it again.

A complimentary doenjang jjigae with a whole crab inside
And, owner... is it really okay for a complimentary side dish to be this generous? The doenjang jjigae (soybean paste stew) pot had plump shrimp plus one whole, large crab dropped in. The moment I sipped the broth, the crab's briny sweetness and the doenjang's nutty depth came through so strongly I let out an involuntary 'oh wow.' It works as both a drinking snack and a hangover cure, and it's an amazing amount of value for a side dish.

500g of red clay garlic marinated beef flower ribs, plus a 5-minute hourglass
Finally, today's star: the red clay garlic marinated beef flower ribs, 500g! Thick, gorgeous flower ribs with pink marbling arrive generously topped with Muan red clay garlic and sesame seeds. Seeing real bone-in beef ribs before they even hit the grill was already exciting, haha. A cute 5-minute hourglass sits on the table — place the foil-wrapped shiitake mushroom on one side of the grill and just wait for the sand to run out, about 5 minutes.

Once the ribs hit the strong charcoal grill, the garlic aroma and grilled meat smell drift up and instantly sharpen your appetite. It's not an artificial, syrupy-sweet marinade — the sweetness is subtle, so the deep beefy flavor and tender texture come through fully. The juice bursts out with every bite, real Hyangnam Korean beef quality. The shiitake mushroom, steamed inside the foil for 5 minutes, was soaked in savory broth and honestly tastier and chewier than a lot of meat.

The perfect combo — gamtae + short rib + chilgejang + onion kimchi
Now for Dorimgwan's ultimate combo. Place a crisp, fragrant piece of gamtae in your palm, add a juicy piece of short rib, then gently top it with the special chilgejang and crunchy onion kimchi and wrap it up. The salty, savory chilgejang, oceanic gamtae, and sharp onion kimchi meld perfectly with the rich meat and melt in your mouth. This is the kind of bite where one person could pass out from how good it is while sharing it with someone else.

Adding a pork belly serving, switching to a cast-iron grill plate
We demolished the beef in no time and got curious about the pork belly too, so we ordered one more serving. For the pork, they swap in a cast-iron grill plate — the outside comes out crisp while the inside stays juicy, textbook crispy-outside-juicy-inside perfection!

The fat-to-meat ratio was ideal, delivering savory richness in every bite. Since this is a beef specialty restaurant, I didn't expect much from the pork, but it was easily better than some dedicated pork belly restaurants — a title as a top Hyangnam meat spot well earned.

Finishing with bibim naengmyeon, plus a generous self-serve bar
No meat meal is complete without bibim naengmyeon (spicy cold noodles)! It arrives with icy, slushy broth and a generous coating of sweet-spicy sauce — wrapping the chewy noodles around a piece of well-grilled pork belly or short rib for a meat-and-noodle combo cleans your palate perfectly!! From the stew to the noodles, every dish on the menu was excellent, so this place also seems like it'd be hugely popular for weekday lunch specials (charcoal beef/pork rib set menus, etc.) as a Hyangnam lunch spot.
If you need extra wrap vegetables, garlic, chili, or pickles, you can just help yourself from the self-serve bar in the middle of the restaurant, no awkwardness at all — very pleasant.
