I love rich, hearty soups and enjoy hunting down good places to eat them, and this time I found one I'm really happy with. It's Gang Galbitang Seomyeon (강갈비탕 서면) on Saessak-ro in Busanjin-gu, Busan. It started getting word-of-mouth buzz not long after opening, and it's already loved by lots of people. From the clean interior to the broth with real depth, there was nothing I'd complain about, so here's my full visit report.
How do you get to Gang Galbitang Seomyeon?
Gang Galbitang Seomyeon is on Saessak-ro in Busanjin-gu, not far from Exit 11 of Seomyeon Station, so it's very easy to reach on foot. Busan Citizens Park and Bujeon Market are nearby too, which makes it a handy stop before or after a walk or day out.
Even from the front, I noticed the neat, tidy exterior, with white tones and wood blending nicely.
What's the atmosphere and solo seating like?
The inside of Gang Galbitang Seomyeon is kept very clean, and there are solo seats along the window and the wall. The staff greeted me with bright, friendly smiles, which put me in a good mood from the first moment. Above all, seeing how clean everything was made me trust the place.

The galbitang at Gang Galbitang Seomyeon has a whopping three big rib bones, so the earthenware bowl feels packed with meat. The sight of it, filled almost to overflowing, is impressive on its own.
The meat was simmered just right, so bone and meat came apart easily and it was very easy to eat. The quality of the meat was so good that there was no gamey smell and no toughness at all, and the tender texture in the mouth was excellent.
How does the galbitang broth taste?
The broth at Gang Galbitang Seomyeon is clear and rich, topped with sliced scallions, with a clean, deep savoriness that didn't taste like MSG. The real worth of galbitang shows in the broth, and with the first spoonful I could taste the care of a broth honestly simmered for a long time. It came from the ingredients themselves, so my spoon just wouldn't stop.
I mixed rice into the broth and topped it with tender rib meat, and it felt like a health boost all by itself. After I polished off the bowl, I felt full and warmed through. It's the taste I'd think of first on days with big temperature swings, at the change of seasons when a cold is coming on, or when you're craving hot, refreshing soup.
