The atmosphere at a pork rib restaurant near Seomyeon Station

Gilchon Sutbul Galbi Seomyeon Main Branch (길촌숯불갈비 서면본점) is a popular pork rib spot less than a two-minute walk from Seomyeon Station on Lines 1 and 2, with lots of repeat visitors. I always come here too whenever I’m craving fresh ribs 🙂

Some tables have partitions and are nicely spaced out, so it is easier to chat than at many barbecue places, which can get pretty noisy. I notice it every time I visit: even when it is busy, the ventilation seems good, so it stays comfortable. That is another reason I keep coming back.

Why we started with fresh ribs

The stars of the menu are, of course, fresh ribs and marinated ribs. At ₩5,900 per 100g, both are very reasonably priced. If you plan to try both, I recommend having the fresh ribs first, then the marinated ribs. We started with one platter of fresh ribs (500g)!

No table-setting fee, plus side dishes and a self-service bar

Usually, barbecue restaurants with inexpensive meat and a self-service bar charge a table-setting fee, but Gilchon Sutbul Galbi does not. There is a wide range of side dishes and a self-service bar, too. Looking over the spread, there was shrimp sesame-oil dipping sauce, salted seafood, wasabi, and barley baek-kimchi, a mild white kimchi said to be a spring delicacy in Jeju.

You can tell they have put thought into even the basic sides, including truffle-oil potato salad and pickled vegetables. The baek-kimchi, where the nutty barley flavor worked so well, and the addictive potato salad that kept calling my hand back were the best!

The binchotan charcoal and myeolchi-jeot, fermented anchovy sauce, were set up quickly.

Our platter of fresh ribs (500g) arrived quickly too. It is pretty generous with the grilled vegetables alongside, right?

The fresh ribs are said to use only 100% bone-in pork belly, sliced in-house every day, so you can see their thickness and freshness at a glance 👍 Once the charcoal aroma joined in as they grilled, the scent alone was enough to really wake up my appetite.

Like other meats, they can turn tough if grilled too long, so it is best to lower the heat as the meat nears doneness.

One bite and you immediately get a nutty flavor and springy chew that are hard to believe at this price 😋 I usually eat fresh meat mainly with salt, but the seasoning on the meat itself was so good that I did not even think of salt.

It was plenty nutty and delicious on its own, but the great thing about Gilchon Sutbul Galbi is all the accompaniments 😃 The myeolchi-jeot tasted more earthy than salty and gave the fresh ribs a different kind of harmony.

The salted seafood, shrimp sesame-oil sauce, and wasabi each brought their own character, enhancing the meat’s savory depth and letting us enjoy it for a long time without getting tired of it.

Since we never got tired of it, we added another order of fresh ribs and kept eating. Not because the marinated ribs were bad at all—the fresh ribs were just that delicious.. The marinated ribs also have a special flavor from their secret aged soy sauce and house sauce, so do give them a try 😌

We also had the steamed egg from the review event, plus a bokbunja highball made with Korean black raspberries that we ordered because it sounded tempting and was reasonably priced. They went surprisingly well together. The bokbunja highball, especially, was as good as one from an expensive highball bar when mixed well—so if you order it, make sure you mix it thoroughly~ I thought I had, but it was not mixed enough, so the last bit was a little sweet 🥲

We also mixed and matched this and that, making ssam, Korean lettuce wraps.

And we pulled apart the nicely grilled rib meat too. This was how I unconsciously cut the ribs and meat while grilling, but most of them had enough meat left on the bone to eat and pull apart easily. So delicious as well 👍 For the finishing dish, we ordered half-and-half naengmyeon for the first time.

I had always finished with soybean-paste stew with dried baby shrimp, but this day I was craving naengmyeon, cold buckwheat noodles. And when you have pork ribs, you cannot leave out naengmyeon! This dish brings mul-naengmyeon in chilled broth and bibim-naengmyeon with spicy sauce together, so how could I not try it? I was even happier because the noodles were the thin kind I personally love.

The serving was divided in half, but it was definitely plentiful. The noodles came quite soft, so if you prefer a chewier texture like I do, it may be worth requesting that when you order.

No long explanation needed—naengmyeon plus pork ribs is a combination that cannot possibly be bad. Honestly, I was so full by then, but I still could not stop reaching for my chopsticks.. 😅 It was absolutely delicious, but their soybean-paste stew with dried baby shrimp is incredible too.. I think I will have a hard time deciding what to eat on my next visit.

Another stuffed-to-bursting ending today 💦 Gilchon Sutbul Galbi is close to the station and reasonably priced, yet offers high quality from the side dishes through the main ribs and the finishing meal. I recommend it as a great pork rib spot!
