On a busy weekday lunch hour, there are days when you don't want instant noodles gulped down in a hurry. You want real, house-made udon with a bouncy, chewy bite. And in Dunsan-dong, an office district, finding a place where you can eat alone comfortably, without feeling watched, and still get real depth of flavor is a bit of a treasure hunt.

Today I visited Jemyeonsoui Haru Dunsan Directly Operated Branch (제면소의하루 둔산직영점) near Daejeon City Hall Station, a Blue Ribbon Survey-certified, authentic Sanuki udon shop that kneads and cuts its dough in the shop every morning!

Where is Jemyeonsoui Haru Dunsan, and what are its hours?

Jemyeonsoui Haru Dunsan Directly Operated Branch is on the first floor on Dunsannam-ro 105beon-gil, between Daejeon City Hall Station and Mokryeon Apartments. It is open from 11:00 to 21:30.

Exterior and atmosphere

The shop stands out with its olive-green exterior and a big calligraphy sign reading "Jemyeonsoui Haru" glowing in golden light. By the entrance there's a wooden plaque reading "自家製麵 (house-made noodles) fresh udon specialist", plus a banner of the flat, wide himokawa udon that grabs your eye before you even step in. Expectations were sky-high already.

Once I opened the door, the inside was much cozier and tidier than it looks from the street.

Is it comfortable to eat alone in Dunsan-dong?

Yes. There is a solo bar counter with an order tablet, and tissues and shichimi (Japanese chili spice blend) set out in neat lines. You don't have to mind the person next to you and can focus on the noodles alone. For a solo lunch in Dunsan-dong, it's hard to beat.

There are also roomy long sofa tables, so it felt really pleasant for coming with coworkers or stopping by on a date.

How are the noodles made in-house?

There's an open noodle-making room at the back of the shop. Every morning, they say, the noodles are made the Sanuki way: only flour, sun-dried sea salt, vinegar and water, kneaded and aged!

Menu and prices at Jemyeonsoui Haru

Even though the noodles are made in-house, a bowl of udon starts at ₩7,500. And extra noodles are free! The signature himokawa udon is ₩12,000, and the one-person set menus come with a small discount. The katsu set is ₩12,000, the curry rice bowl ₩8,900, and so on!

The main reason I came today was to try the signature himokawa udon (wide flat udon). For the side, the classic crispy-outside, cheesy-inside mini cheese tonkatsu, and for a cool gulp down the throat, my daytime-beer cheat code: Asahi. A perfect three-part combo order.

Mini cheese tonkatsu and a daytime Asahi

The mini cheese tonkatsu came out before the udon, and despite the name "mini" it is packed full. It arrives freshly fried on a thin wire rack, and the coating is golden and crunchy, with not a hint of stale oil.

The middle is stuffed with soft, milky mozzarella. The moment you bite in, there's a bright crunch, then the chewy meatiness of the thin pork wrapped around it and rich, nutty cheese filling your mouth. At this point, calling in a beer is only natural, right?

One gulp of Asahi, bitter and fizzy, after a bite of the cheese tonkatsu, and the work stress piled up all morning evaporated, at least for a moment. Haha!

What kind of udon is himokawa udon?

Himokawa udon is an unusual udon of thin, wide 1mm noodles dipped in tsuyu (Japanese dipping broth), and it is Jemyeonsoui Haru's signature menu. And now, the star of the day, the one that earns this place its title as a Dunsan-dong udon favorite: the himokawa udon makes its entrance!

Shaved ice is laid over a wide bowl, and on top, noodles spread thin and wide like a piece of silk sit neatly, topped with sesame seeds.

When I carefully lifted one strand with my chopsticks, it was so wide it flapped like a flag, and the ice kept the temperature firmly in check so it glistened.

How to enjoy himokawa udon

You dip the wide noodles into a dedicated tsuyu sauce loaded with wasabi, scallion, grated radish and sesame. I slurped them up, and the moment they touched my lips they slid in smooth as silk, and when I bit down, the dense, springy chew typical of Sanuki house-made noodles pushed back against my teeth in a good way.

If the noodles start to stick together, sprinkle a little of the warm water served alongside, and they separate strand by strand again!

Thanks to a wide surface you never get from ordinary round noodles, they soak up plenty of the savory, cool tsuyu, so every bite gives you the nutty flavor of the chewy dough and the deep taste of the bonito broth!

I happily ate round two the same way with the free extra udon noodles. Haha.
