Beomil-dong, Busan beef BBQ with pickled perilla and wasabi: Hanuso
In short
Hanuso Dwitgogi Beomil Branch is a Korean beef BBQ restaurant in Beomil-dong, Dong-gu, Busan, serving hanwoo dwitgogi (lesser-known hanwoo cuts) from ₩14,900 per 100g along with other grilled hanwoo cuts. On yet another visit as a regular, the writer had the hanwoo dwitgogi served as brisket and rib finger meat, grilled it on a tilted grill plate and ate it with pickled perilla leaves and wasabi, and despite being beef it never felt greasy. What side dishes come with the beef?
The side dishes at Hanuso Beomil Branch include dried radish strips, pickles and dongchimi (radish water kimchi), and as I always notice, they're clean, no-fuss and tasty. There's not a weak hitter in the lineup.

Pickled onions, plus oil dip and salt for the beef, are also set out.
The interesting thing is that Hanuso grills its beef using corn as the fuel, and the subtle aroma is really charming. It's a flavor only those in the know know, haha.
Which cuts does the hanwoo dwitgogi come as?
The hanwoo dwitgogi I ordered that day came as brisket (eopjinsal) and rib meat. The cuts they serve seem to differ a little from day to day, so keep that in mind.

Honestly, every cut at Hanuso is delicious. I've tried tenderloin, sirloin, dwitgogi and more, and if you want the best value, I recommend the hanwoo dwitgogi!
How to grill beef on the tilted grill plate
The grill plate at Hanuso is slightly tilted: the heat is weak at the top and strong at the bottom. Beef doesn't need much grilling anyway, so it seems delicious no matter who cooks it.

The beef looked so pretty as it cooked. Usually if I eat a lot of beef it gets greasy, I get sick of it, and at some point it feels like something's stuck, but the beef at Hanuso just keeps going down,, I wonder why.

Pieces that are done get moved to the upper part so they don't overcook. It differs a bit by cut, but on average I'm the type who likes the outside seared fast over strong heat and the inside slightly underdone.

The quality of the beef at Hanuso really is excellent. They've been in business in this neighborhood for a long time, and I figure that with meat this good, that's why so many customers keep coming to this Beomil-dong beef spot.

Hanwoo dwitgogi with wasabi on pickled perilla leaves
The beef at Hanuso is good however you eat it, so have it with salt, wasabi or whatever suits your taste.

As I ate, my personal pick was a little wasabi on pickled perilla leaf (kkaennip jangajji). It took away any greasiness completely, so I thought it was the best combo.

Even though it's called dwitgogi, it's definitely not a throwaway cut. It's a special cut, so Hanuso in Beomil-dong, Busan is where you get a more fun texture than the beef you usually eat, plus amazing value.
Beef soup and side menu
The beef soup that comes as a standard service at Hanuso is really good too. That day the meat alone filled me up, so I didn't order any sides, haha. The doenjang stew (soybean paste stew) and other side menu items are tasty too, so go ahead and try them~~
