Dojeok, an Inge-dong pork belly favorite with 20 years of kalsamgyeop
The restaurant Yuju's family visited is Dojeok, famous as an Inge-dong pork belly spot. Dojeok has been known for its 20-year-tradition kalsamgyeop (knife-scored pork belly) on Suwon's Nahyeseok-geori — it's so famous! Yuju's mom used to visit often too. I'd been craving kalsamgyeop for a while and stopped by, and as expected, it was delicious! You know how hard it is to find a restaurant with parking in Inge-dong, right? This place even registers you for free parking, which made it even better :) Let me introduce it right away!

This looks like the same exterior I remember from my twenties — I love that it's stayed so consistent.

Inside the restaurant: a spacious hall good for group dinners too
Famous for the kalsamgyeop with techniques from a Master of Living champion, Dojeok's interior was really clean and spacious. It has enough room for groups of 2–4 up to full-on company dinners.

Menu and order: kalsamgyeop ₩16,000, hwangje deotsal ₩17,000
Most people at Dojeok order the kalsamgyeop — it's the main dish here. There's also gochujang pork belly, hwangje deotsal, and hangjeongsal (pork jowl), so you can order to your taste. There are rice dishes too, perfect for filling up after the meat.

We ordered kalsamgyeop ₩16,000 x2 and hwangje deotsal ₩17,000.

The basic table setting and doenjang stew
The table setting was laid out so neatly. They set out soybean powder, sauce, and pickled onion according to the number of people,



and it was nice that they also brought out pickled scallion, doenjang stew (soybean paste stew), and salad — all good to pair with the meat.
This doenjang stew especially is so good! It's packed with ingredients, hearty, and the broth has deep savory flavor plus a refreshing finish. You absolutely have to order extra rice and mix it in :)

Knife-scored pork belly, staff pre-grill it for you
Seeing the pork belly scored at such even intervals shows this isn't ordinary effort. Every time I see it, I'm amazed at how finely and precisely they score it. It looks so much more appetizing than plain pork belly.

One great thing about Dojeok is that the staff grill the meat deliciously from start to finish. Pork needs frequent flipping, so it must take a lot of effort, but they grilled it so well that I really appreciated it! Especially with the knife-scored pork belly, they pre-grill it once, then bring it over and cut it into bite-sized pieces for you.


When it turns a nice golden-brown color, that's exactly the perfect moment! Since they grill it for you, all you have to do is chat and enjoy eating. Such a happy time :)



We tried some simply dipped in salt, and some paired with the side dishes. Dojeok's side dishes are clean in flavor — totally my style!

They kept grilling continuously so our meat supply never ran out, and we just enjoyed eating. The most delicious meat in the world is meat someone else grills for you — that's a fact :)

Feeling a bit short, we added a steamed egg order, and since it was the old-fashioned steamed egg style, it was great for digging into with a spoon.
