Solo-friendly Cheongju restaurant: short rib pot rice at Sorori Sotbap
In short
Sorori Sotbap Culture Factory Branch is a sotbap (Korean pot rice) restaurant on the first floor of the Wonder Aria building at the Culture Factory in Naedeok-dong, Cheongju. Eating alone, I ordered the best-selling braised short rib sotbap for 16,000 won and packed a salmon buckwheat gimbap (seaweed rice roll) for 13,000 won to take home for dinner; the scorched rice at the bottom of the pot, stirred with butter, was the highlight. With a spacious dining room and a view over the grass plaza, Sorori Sotbap works just as well for a solo meal as for lunch with parents.

Sorori Sotbap Culture Factory Branch, a Cheongju Museum of Art-area favorite, uses Jincheon rice and local Chungbuk ingredients — the sotbap broth is freshly brewed every morning, and the braised short rib simmered in a special sauce makes it a great spot for solo dining.

What kind of place is Sorori Sotbap Culture Factory Branch?
Sorori Sotbap Culture Factory Branch is a well-known Cheongju sotbap restaurant branded around the Sorori rice grains — the world's oldest known rice seeds, discovered in Oksan, Chungbuk. They use Jincheon rice that's kept in ultra-low-temperature cold storage at the milling factory so the flavor stays consistent, tasting like freshly harvested rice 365 days a year. They also run a rice-tasting inspection machine for strict quality control, so only good rice makes it to the table — reassuring to hear.
With a variety of sotbap dishes and a distinctive buckwheat gimbap (seaweed rice roll) on the menu, Sorori Sotbap Culture Factory Branch covers both flavor and health.

Inside Sorori Sotbap: dining room and grass plaza view
Located on the first floor of the Culture Factory Wonder Aria building, you can eat while looking out at an open grassy plaza, and the natural light coming in gave the space a warm feeling — really nice.

The dining room is spacious, so solo dining was comfortable, and the retro-yet-cozy interior looked like it would also work well for a date.

Braised short rib pot rice, 16,000 won
The best-selling menu item at this Cheongju favorite, Sorori Sotbap: braised short rib sotbap for 16,000 won. It comes with sotbap made from broth brewed with clean water and kelp, alongside tender braised short rib made with a special sauce blended from various vegetables and fruits.

Tender braised short rib served with healthy ingredients like shishito peppers, sweet pumpkin, and jujube — Sorori Sotbap covers both taste and health, and it's easy to see why this Cheongju favorite has such a good reputation.

Sorori Sotbap Culture Factory Branch, this Naedeok-dong, Cheongju favorite, seems like the kind of place your parents would love too.
The braised short rib and the various ingredients were more generous than expected.
The slightly scorched rice at the bottom of the pot was secretly the best part.

The umami and depth of flavor in the braised short rib sotbap were incredible. There's a reason it's the best-selling menu item.

It's delicious as is, but adding a bit of savory butter amplifies the flavor.

The braised short rib sotbap mixed well with butter, wrapped in seaweed and eaten with squid jeotgal (salted fermented squid) — absolutely delicious.

Salmon buckwheat gimbap to go, 13,000 won
This is the salmon buckwheat gimbap I ordered to eat for dinner — the packaging was very neat, making it look like a great option for group lunchboxes too.

Salmon buckwheat gimbap generously packed with fresh salmon and thick slices of egg, ₩13,000.

Buckwheat noodles boiled fresh every morning and aged in special tsuyu sauce, filled with sweet egg and house-aged salmon — a hearty salmon buckwheat gimbap.

I really liked that the flavor didn't change even after sitting in the fridge for a few hours! It didn't feel heavy on the stomach, more like a healthy meal. The salmon and egg were so thick — genuinely delicious. Great to eat plain, or dipped in sriracha mayo sauce or wasabi soy sauce! This is a salmon buckwheat gimbap from Cheongju favorite Sorori Sotbap that I'd love to buy again.
