This time I'm writing about Jipbul Taebaek Suwon Ingye Branch, which I visited when I was craving meat in Ingye-dong, Suwon. Not just any grilled meat — prime rib pre-seared over rice straw and charcoal, which already sounded special from the name alone. I was curious what ribs with a straw-smoke aroma would actually taste like, so I went to check it out. ^^
Where is Jipbul Taebaek Suwon Ingye Branch, and where do you park?
Jipbul Taebaek Suwon Ingye Branch sits near Nahyeseok-gil in Ingye-dong, Suwon, so it was easy to get to. It's open daily from 11:30 to 01:00. There are tons of restaurants and bars around, so as evening fell I could really feel that lively Ingye-dong energy. Among them, a place built around a straw-fire concept stood out just from the name.
Location matters when you're setting up a meat dinner, and being near Nahyeseok-gil meant I could spend time in the area before or after eating too. One thing to note: there's no dedicated parking lot at the restaurant itself. I ended up parking on the street right next to Hyowon Park.

Jipbul Taebaek's interior was pretty distinctive, haha. Walking in, I immediately felt that lively BBQ-restaurant energy.
I'd come that day specifically to really eat some meat, and just sitting down at the table already made me hungrier somehow, hahaha. Lots of famous signatures on the wall too — clearly a well-loved spot!! I really liked Jipbul Taebaek's distinct interior.
Ordering prime rib for two and beef cheonggukjang stew

What I ordered that day was two servings of prime rib (woodae galbi) plus a beef cheonggukjang (fermented soybean paste) stew. The prime rib I chose was a bit special — apparently they use kkotgalbisal, the cut from ribs 6-8, known as one of the tastiest parts of the beef short rib section.
Kkotgalbisal has a nice balance of lean meat and fat, so it's easy to enjoy both a tender bite and a rich, savory flavor. And rather than just grilling it straight up, it comes pre-seared over rice straw and charcoal, which really raised my expectations. Plenty of BBQ places do a pre-sear these days, but one with an added straw aroma definitely felt like a clear point of difference.

Bracken fern and kimchi came out to grill alongside the meat, haha. There was also a dipping sauce to go with the meat. ^^ All the side dishes were neatly presented and delicious, so I kept going back for refills, hahaha.









How straw-seared prime rib arrives at the table
The moment the prime rib arrived, the visual alone was seriously appetizing. They pre-sear it at a peak temperature of around 1,000°C, evoking the days when meat was cooked over rice straw fires. The idea is that the intense heat quickly sears the surface to lock in the juices, while the rice straw's mellow, nutty aroma gets layered on top.

Looking at the meat up close, the surface was appetizingly browned and I could subtly pick up that distinctive straw-fire aroma. You might expect a smoky flavor to be strong and sharp, but this was more like the meat's own natural flavor with just a touch of straw aroma added — which made it fun to eat.

One thing I really liked was the grilling service. Meat can taste quite different depending on the timing of the grill, right?


Grill it too long and the juices dry out, leaving it tough; undercook it and the timing is tricky to nail. Here, systematically trained staff handle the grilling professionally, which made things much more comfortable as a guest.
Especially with a thick cut like prime rib, grilling it yourself can leave the outside burnt and the inside underdone. Not having to worry about that and just enjoying the meat was a real plus.

What does Jipbul Taebaek's prime rib taste like?
Taking a bite of the prime rib, the first things I noticed were the tender texture and the rich meaty aroma. Thanks to the kkotgalbisal cut's moderate fat content, the savory flavor built with every chew, and the surface carried that subtle straw-fire aroma, giving it a somewhat different flavor profile from typical charcoal-grilled meat.

What I especially liked was that the straw aroma didn't overpower the meat's flavor — it followed along subtly instead. In one sentence: tender meat with a light touch of straw aroma trailing at the end, hahaha.

Prime rib really is best eaten in one big bite. ^^ The outside had a rich flavor where the smoky char and straw aroma came together, while the inside stayed moist and tender.
The fat wasn't overwhelming, and thanks to just the right marbling, the savory flavor kept building the more I chewed — that impressed me.
Strangely, the meat felt even more comfortable and enjoyable on the second and third bite than the first. So if you're looking for a standout BBQ spot in Ingye-dong and want to try something a bit special, this straw-fired prime rib seems like a pretty solid choice.

Right around when I was nearly done eating, a staff member came over and picked all the meat off the bones — wow!! That was seriously skilled work, hahaha. The meat stuck to the bones was ridiculously tasty. ^^


Prime rib with Korean beef cheonggukjang stew
When you're eating meat non-stop you start craving some broth in between, hahaha. So I also tried the beef cheonggukjang stew I'd ordered alongside. A bite of meat followed by a warm spoonful of the stew — the pairing worked really well together.
The stew's distinctive nutty aroma and rich broth seemed to reset my palate between bites of the rich meat. Compared to eating the prime rib alone, having it with the cheonggukjang stew made for a much more filling meal.

Ingye-dong is a place where crowds gather in the evening, so there are tons of BBQ restaurant options — but straw-seared prime rib really stands out as a clear point of difference here.
