I'd never really had proper wudae galbi (prime rib) before, so when I heard a place that grills prime rib for you — Jipbul Taebaek — had newly opened on Nahyeseok-gil in Ingye-dong, I had to check it out. Here's my review of the marinated prime rib, which I was very happy with!!
Parking and opening hours at Jipbul Taebaek in Ingye-dong, Suwon
Jipbul Taebaek Suwon Ingye Branch has a paid building parking lot. The first 60 minutes cost ₩1,500, then ₩500 per additional 10 minutes, up to a maximum of ₩4,000. It's also worth knowing the parking rates at the nearby Gyeonggi Arts Center lot, which my husband and I often use.
Hours are 11:30 - 01:00 — a really long window, so it's easy to drop by without worrying about timing.

There's a nicely decorated waiting area set up right in front of the restaurant.
If there's a wait, you can register right outside the restaurant.
What Jipbul Taebaek feels like late at night, plus the self-serve bar
We visited Jipbul Taebaek Suwon Ingye Branch in the late evening! There was no wait, but most of the seats were already filled.

It wasn't loud — more of a cozy hum of people chatting quietly.
The interior has scaffolding-style pillars, which I'd never seen before and found kind of interesting.
It's only been open about two months, but you can already tell plenty of people have visited from the signatures left on the walls!

Even late at night, the vegetable bins were fully stocked! The self-serve bar in the middle of the restaurant was clean and well kept.


And the important part — the review event, haha. You can pick one of three: guacamole & tortilla, matcha affogato, or hallabong (tangerine) sherbet.
What we ordered at Jipbul Taebaek and what it cost
I was curious about the raw prime rib, but of course, since it was late, it was sold out...!! 🥹
Corkage is allowed for anything except drinks sold in-store! One bottle is free, and it's ₩10,000 per bottle after that.

For reference, you can order just the prime rib meat separately, so if you want a more cost-effective option, I'd recommend going with that instead!

Side dishes and dipping sauces at Jipbul Taebaek
The side dishes come out all together on one tray!



The quality of the side dishes that come with the meat is impressive.


And these are the dipping sauces, haha. There were quite a few unusual ones, like black sesame salt, angelica pesto, and Sarcodon (nutty mushroom) pesto.
Marinated prime rib for two: how the staff grill it for you
Each table has a clean grill set up.
They grill the kimchi and bracken fern along with the meat!

It comes out as a big bone with the rib meat still attached.
They cut the meat off the bone themselves and grill it for you.
The prime rib gets arranged so neatly on the grill as it cooks!

Once it's mostly done, they pile the meat back onto the bone.

And there it is — the finished prime rib "battleship" 🥳 haha.


I expected the marinade to taste sweet, but it actually had a slightly tangy, nutty flavor!! It never got sickening — I could just keep eating it. So, so good....!
If you're looking for a great marinated (soy) rib restaurant on Nahyeseok-gil in Ingye-dong, I really recommend this place! The raw meat is probably good too (haven't tried it...), but the marinade here is genuinely delicious.

Before the meat, they also brought out rice cake wraps with soybean powder!


I tried a bunch of different combinations, but honestly the marinade was so perfect that eating the rib meat on its own was the best!! Might've been different with raw prime rib, haha.
Beef cheonggukjang stew and buckwheat mul-naengmyeon to finish

For my main, I ordered the beef cheonggukjang stew with rice.
When you stir it, there's actually quite a lot of beef in it! 😆

It didn't taste like doenjang (soybean paste) stew — it was unmistakably cheonggukjang (fermented soybean stew)!! And I loved that. It's got that nutty, savory flavor that makes the rice go down easily, haha. My husband tried it too and said it was good!


This one's my husband's dish! A mul-naengmyeon (cold buckwheat noodle soup) with quite fancy toppings. They serve the mustard and vinegar in individually packaged portions. The taste is a bit different from the naengmyeon at other BBQ restaurants — the broth is pretty nutty, so it might be a love-it-or-hate-it thing, but it suited my taste 👍
By the time we ordered our mains, they'd also cut off and grilled the meat still stuck to the rib bones. The meat right on the bone is so good, haha.
Is Jipbul Taebaek in Ingye-dong, Suwon worth going back to?
Yes, I'd definitely come back. A great spot on Nahyeseok-gil in Ingye-dong for work dinners or dates alike. The marinade on the prime rib is genuinely delicious...!!!! The cheonggukjang stew hit exactly my taste too, haha.
