My mom, who normally doesn’t go for meat, unexpectedly said she wanted thin-sliced pork belly. So I looked for somewhere the family could go comfortably. Among all the barbecue places in Daeyeon-dong, I chose Daepae Maket Busan Daeyeon Branch because it slices its pork belly to order and has a great-value self bar.

Even on a weekday evening, the restaurant was buzzing with diners. Catchtable and a waiting area were neatly set up, and the interior was so spacious that it looked great for group gatherings too. As soon as we sat down, they brought over a whole kettle of hot welcome odeng-tang (fish-cake soup). There was a dedicated burner at the table, so we could keep it warm and ladle out the broth throughout the meal, which I really liked.

The self bar, available for ₩2,000 per person, was more varied than I expected. Along with fresh ssam vegetables for wrapping, it was packed with things to grill: potatoes, mushrooms, rice cakes, ham, bracken fern, and sundae (Korean blood sausage).

The bowls themselves were especially large, so it was convenient not having to make repeated trips for the bean sprouts and napa cabbage kimchi that we love. My younger sibling and I are bean-sprout fanatics, so I loved being able to bring back plenty to grill without feeling self-conscious.

The sauces were neatly organized too, and the staff quickly refilled anything that was running low.

Rather than pre-sliced frozen meat, Daepae Maket uses a meat slicer to cut the pork belly as you order, which gave it such a pleasant texture.

We piled plenty of thin-sliced pork belly onto the grill, then grilled bean sprouts, kimchi, mushrooms, and sundae below where the fat ran off. My mom especially enjoyed the sundae browned in the savory pork fat.

Adding grilled cheese and golden-brown potatoes made for a perfect combination that doubled the nutty richness.

Seafood doenjang-jjigae and highballs

Partway through the meat, we also added seafood doenjang-jjigae (soybean-paste stew) and bowls of rice for a filling meal. We moved the odeng-tang to the side and let the stew bubble away; the longer it cooked, the deeper its flavor became. With blue crab and seafood in it, the broth was refreshing and felt like it cleared away the richness in our mouths.
