With a great atmosphere and, most of all, a reputation for meat quality that's on another level, I visited a pork galbi (marinated pork rib BBQ) specialty restaurant in Seomyeon, Busan called Gilchon Sutbul Galbi Seomyeon branch!

The interior stands out for its distinctly Korean feel and warm simplicity, with high partitions at every table so families and friends can enjoy a private meal. There are also various group seats and rooms available, so it seems perfect for team dinners or gatherings too.

You can easily order from the table order tablet set up at your seat. Gilchon Sutbul Galbi hand-butchers the meat every day, serving only fresh, delicious fresh ribs, and they use 100% bone-in pork belly cuts! That's probably why the ribs taste chewier and more delicious than at other places!


Side dishes and the self-serve bar
Once you're seated, they set out a neat basic side dish spread for you. Lettuce, perilla leaves, peppers, shredded scallion salad, shrimp sesame oil sauce and salted seafood, wasabi with wild garlic, baek-kimchi (white kimchi), pickled garlic stem in gochujang, potato salad, ssamjang and salt. A full table's worth~ all set out.

Extra dishes and side dishes are available anytime at the self-serve bar, and when the baek-kimchi and vegetables ran low, the staff refilled them right away!

What we ordered and how much it cost
Fresh ribs with a vivid crimson color that you can tell is fresh just by looking!! What I ordered that day was
- Fresh pork galbi full plate (500g): ₩29,500
- Additional fresh pork galbi half plate (270g): ₩15,900
- Barley shrimp doenjang stew: ₩2,900
- Steamed rice and alcohol

The fresh ribs came out with sliced potatoes and chives, and they put it straight onto the well-heated charcoal grill!


How do the hand-cut fresh pork ribs taste?
Maybe because they hand-butcher the fresh ribs in-house, the chewy texture was so good, and the firm rib meat mixed with just the right amount of fat was clean and delicious!







They score the meat carefully so it cooks well, so the charcoal smoke flavor seemed to soak in evenly! We finished off the full plate of ribs in no time and added a half-plate of fresh ribs haha... before I knew it, that whole plate was gone too.

A bite with the baek-kimchi, a bite with the pickled peppers, a bite with the pickled beets~ ahh... I'd lost my appetite in the hot summer, but I got it back lol.

The fresh ribs themselves are so tasty that even dipped in just plain salt, they were delicious!
Tiger prawn doenjang stew and doenjang sulbap (stew over rice)
Personally, I think you absolutely have to try the barley shrimp doenjang stew! It's packed with barley shrimp, giving it an even richer, deeper flavor, and it's generously loaded with whole tofu.




A flavor where you can taste depth, umami, and a bit of spicy kick all at once! It's really amazing eaten with the meat! I mixed the doenjang stew into the warm rice that came out and ate it as doenjang-sulbap (doenjang rice mixed with alcohol on the side) — it's filling and has a flavor that people of all ages can't help but love haha.
You can taste the fresh, delicious flavor of the ribs themselves, plus a variety of side dishes and reasonably good value for the price! If you're looking for a quality meat restaurant in Busan, I recommend Gilchon Sutbul Galbi! ^^
