With a name this playful, I had to go check out Sinbakkase (신박카세) in Bokdae-dong, Cheongju ♡

What is Sinbakkase? A fusion omakase of seafood and meat

Sinbakkase sits right in the middle of the Jiwell City food alley in Bokdae-dong. You can spot the huge Sinbakkase sign right away!

On the day I visited, the seasonal ingredients on offer were Wando olive flounder, salmon, gizzard shad, abalone, and shrimp.

There's also a big menu board on the first floor where you can preview the course composition and extra menu items :)

How to find Sinbakkase and where to park in Jiwell City food alley

Sinbakkase is located in the Jiwell City restaurant alley in Cheongju. It's a 30-second walk from Bokdae-dong Myeongjak! It's on the 2nd floor above Matchandeul Wang Sogeum Guyi.

There is a parking space behind the building, but it was full when I went ㅠ.ㅠ I'd recommend parking on the nearby main road or using the Heungdeok Health Center lot.

Inside Sinbakkase: a roomy, spotless omakase room in Bokdae-dong

Here's the inside of Sinbakkase in Bokdae-dong. As soon as I walked in there were so many people!!

Since it's a brand-new store, the interior was very clean overall, with a light wood tone and black accents giving it a comfortable yet tidy feel.

There were regular 4-person tables, a 6-person group table, and bar seats too :) The place itself is fairly spacious, so it seems like a good spot for a Bokdae-dong date, a family dinner, or a work gathering!

The Sinbakkase omakase course, from seafood to meat

First course of the Sinbakkase omakase spread
Abalone innard soup served in a cup

Course 1: abalone innard soup

First up was the warm abalone innard soup! It had a texture somewhere between a soup and a stew, not sticky at all, the abalone innard flavor was clean, and there was a slight peppery kick that really woke up my appetite before the meal haha. It came in a cup so I just sipped it right down.

Course 2: clear monkfish soup (agu jiri-tang)

They brought out the monkfish jirim-tang first! The pot was packed with fresh monkfish, bean sprouts, water dropwort and more — the monkfish itself was stuffed full and had plenty of meat on it. I let it simmer for about 5 minutes before eating, and the broth had this spicy kick that was genuinely delicious.. high quality bb

Course 3: bonito sesame salad

This is a salad with dressing and katsuobushi (dried bonito flakes) over tomato and cucumber. Katsuobushi on tomato?? First time trying that combo, and the salty umami of the katsuobushi worked really well with the tomato.

Course 4: beef sirloin yukjeon (egg-battered beef pancake)

The beef dish was sirloin yukjeon (pan-fried beef). Warm yukjeon topped with sliced cheongyang chili haha. The meat was tender and not greasy at all.

Course 5: seasonal steamed shrimp and clams 🦐

Look how nicely they peeled that shrimp haha. The shrimp was plump and bouncy, and the clams were warm and moist too. Since it's a budget-friendly omakase, I half-expected things to be dried out or lukewarm, but the shrimp and clams were freshly steamed and still warm!!!

Course 6: stir-fried chicken neck

Stir-fried chicken thigh cooked with green onion! When you eat it together with the green onion, the sweetness of the onion and the smoky char of the grilled thigh make an unbeatable combo ♡ It had a slight spicy kick too, which was exactly the course I needed since I love spicy food.

Course 7: seasonal aged sashimi and sushi

The seasonal aged sashimi on the day I went was 2 pieces of Wando olive flounder, 2 pieces of flounder fin, 4 pieces of salmon, 4 pieces of gizzard shad, plus 4 portions of sushi rice haha. They made salmon sushi for us right there 🍣 All the aged sashimi was soft, rich, and tender!!

Course 8: seasonal seafood — abalone sashimi

Beautifully prepared abalone sashimi. It must have been alive just before serving. Zero fishy smell, and it had that fresh, crunchy bite haha.

Course 9: red vinegar ade (hongcho ade)

Once you finish the meal, you can ask the staff for the hongcho (vinegar) ade and they'll bring it out. Sweet and tangy, it left me feeling pleasantly full and satisfied 💗

Add-on: seafood abalone ramyeon, 8,000 won

Pot of seafood abalone ramyeon with shrimp and whole abalone

Partway through the course, the seafood was so good that I decided to add on the seafood abalone ramyeon haha. I didn't expect much for ₩8,000, but the big pot came loaded with shrimp, clams, bean sprouts, and a whole abalone. I was so glad I ordered it and ate it up happily ㅋㅋㅋㅋ

Plate of melon served as a complimentary treat

They also brought out melon as a free service item!! Even with the restaurant packed and the staff clearly busy, they still took the time to serve melon. It was perfectly ripe and sweet, thank you ♥

Verdict: is Sinbakkase's 29,900-won omakase worth it?

Full spread of the Sinbakkase omakase course

For under ₩30,000 per person, Sinbakkase let me try abalone, shrimp, and aged sashimi alongside monkfish jirim-tang, yukjeon, and stir-fried chicken thigh — steamed, pan-fried, soup, grilled and raw dishes covering both sea and land. Even at that price, everything was genuinely high quality. And every single staff member was so kind — probably the friendliest service I've had at any restaurant recently!! This new spot has all the signs of becoming a huge hit ㅋㅋㅋㅋ
