Nampo-dong tripe grill, 5pm weekday large pan and patbingsu: Bupyeong
In short
Bupyeong Yang Gopchang (부평양곱창) is a beef tripe and intestine restaurant in an alley in Bupyeong-dong, Jung-gu, Busan, near Nampo-dong. On a weekday visit at 5pm, the writer ordered the large marinated stone-pan tripe at regular spice, added udon noodles, finished with fried rice and got free patbingsu (red bean shaved ice) as a weekday perk. With chewy tripe cooked for about 20 minutes and patbingsu to cool down, Bupyeong Yang Gopchang is a reliable pick when you crave tripe in Nampo-dong.

Where is Bupyeong Yang Gopchang — walking distance from Nampo-dong and Gukje Market
Bupyeong Yang Gopchang is at 17 Bupyeong 2-gil, Jung-gu, Busan — true to its name, it's in the Bupyeong-dong area, and it's a tripe restaurant near Nampo-dong. It's in a convenient spot to grab a meal after wandering around Nampo-dong or Gukje Market, so it's a place I come back to whenever I'm craving tripe in Busan. I visited Bupyeong Yang Gopchang, a long-running Nampo-dong tripe favorite~

This Nampo-dong tripe favorite, Bupyeong Yang Gopchang, is also popular for its outdoor patio seating when the weather's nice. It's way too hot these days though, so straight inside!!! They were running a patbingsu event for weekday visits. And if you come before 3pm on a weekday, they even throw in a free steamed egg!!

Weekday 5pm visit, full by 6pm — make sure you check location No.1 vs No.2
Bupyeong Yang Gopchang is big and spacious enough to have a second location!! (Make sure to double-check whether you're meeting at No.1 or No.2, haha.) I went at 5pm on a weekday to catch a quiet time..! But by around 6pm on that same weekday, the place had completely filled up..! Just something to keep in mind.

Ordering the large stone-pan seasoned tripe — the side dish spread
For this visit, I ordered the large stone-pan seasoned tripe at Bupyeong Yang Gopchang. Since I've been here several times, I didn't even have to think about the menu (everything's good, honestly). Usually I get the salt-grilled tripe and hot pot, but this time I went with the large stone-pan seasoned option!

The basic side dishes are doenjang jjigae (soybean paste stew), sundubu (soft tofu), cabbage salad, dressed lettuce, pickled radish, and more.

Staff cut and cook the stone-pan tripe for you — takes about 20 minutes to cook
The large stone-pan seasoned tripe came out right away! This pot-looking stone pan?? is packed full of seasoned tripe! At first it looks like it might be a bit small, but watch out — as you eat, you realize there's a lot..! While it's cooking, the staff come by and cut and cook everything for you! It takes a little while to cook, though..!

Is the regular-spice stone-pan seasoned tripe spicy? Paired with udon noodles
The regular-spice level of the stone-pan seasoned tripe at Bupyeong Yang Gopchang wasn't spicy at all. After about 20 minutes when everything was fully cooked, I tried it — there was that signature chewy texture of tripe, and the seasoning wasn't too plain, making it great alongside rice or drinks. Oh, and the spice level is adjustable too, but I went with regular. Partway through, I added udon noodles to the mix! There's a choice between udon and glass noodles for the add-on, but personally I think udon tastes better..

Finishing with fried rice — cooked by the staff, not self-serve
What else could finish off a dish like this seasoned tripe...? Fried rice..! And the fried rice isn't self-serve — the staff cook it for you, so definitely order it and try it.

Weekday dessert: free patbingsu
And just as I was about to get up, they told me that visiting on a weekday gets you a free patbingsu (shaved ice dessert) for dessert. After eating tripe, that seasoning flavor tends to linger in your mouth, so finishing off with a cold patbingsu was such a nice palate cleanser. There's also candy, just so you know..!

Wrap-up
Honestly, there are so many places to eat in Nampo-dong that it's hard to decide where to go, but this time I was craving tripe again after a while, so I went to Bupyeong Yang Gopchang! If you're specifically looking for a Nampo-dong tripe favorite, I really want to recommend Bupyeong Yang Gopchang! This was my review of eating my fill with the large stone-pan seasoned tripe and finishing off with patbingsu at Bupyeong Yang Gopchang.
