Next up in my Paju food finds is a French-style bakery! Every time I visit my parents in Paju I check off one more spot from my saved list, and today's is a Paju Unjeong bakery 🥖 also known as a Dongpae-dong baguette spot for using its own naturally cultivated levain ➰
Tue–Sat 10:00–18:00, Sun 10:00–15:00, closed every Monday. 2 hours of parking supported at the (Farm Tower) building.
Where is Boulangerie Tan Unjeong Main Branch, and is there parking?
Boulangerie Tan is on the first floor of Farm Tower in Dongpae-dong, Paju. The entrance faces the road!! There's a separate staff-only space further inside the building — maybe where they culture the levain?!


Last time I came in the afternoon and all the bread was sold out, which made me sad, but this time even though I came around lunch, quite a lot was already gone.


Looks like nearby they also do delivery through an app. So jealous of living in Boulangerie Tan's delivery zone... 🥹
Natural levain and 14-hour cold fermentation at Boulangerie Tan
Boulangerie Tan only uses organic flour and French flour! No artificial additives at all — no measuring agents, emulsifiers, preservatives, or coloring, they say!! Slow-made bread... can't wait 🤤

On top of that, Boulangerie Tan's bread goes through more than 14 hours of cold fermentation — bread lovers probably already know this... slow-made bread,,? That's tasty bread.. 🙏✨


What bread does Boulangerie Tan bake?
As soon as I arrived I could see all sorts of tempting breads — not just hard-crust baguettes, but croissants, flan (egg tarts), loaf bread, sandwiches, and more, a whole lineup ready to go.


Honestly I came to look at other breads first, but I couldn't resist the look of this olive loaf...

I set the olive loaf aside for now and looked at the other breads, and wow, everything looked delicious...

Brunch discount, Fritz coffee beans and the 3+1 salt bread deal
During brunch time (10:00–14:00) there's a discount when you buy a sandwich with a drink! And since Boulangerie Tan uses Fritz beans, I couldn't skip ordering coffee either 👀


There were several kinds of salt bread too, including a pollack roe salt bread......ugh. Buy three and you get a plain salt bread free as part of a 3+1 event. Keep an eye out for their little promotions ✨✨

The chipotle pastrami panuozzo already seemed like a cheat code just from having chipotle in it


I was debating whether to also grab a salt bread... Since Boulangerie Tan is takeout only, I felt a little bad standing there deliberating on my own 🥹 but luckily it wasn't too busy right at that moment.


Every single bread looked delicious, but lately I'm completely obsessed with chocolate baguettes and chocolate breads, tasting my way through every version, so I went with the chocolate bread! And since it's apparently Boulangerie Tan's signature, I had to try it, right?

Ugh.. can ciabatta really look this good..? And the price is pretty reasonable considering the fillings and ingredients. Maybe that's possible because they only operate as takeout?
Baguette with fresh cream is honestly heaven... I debated but it was too hot that day and I still had some travel time ahead, so I held back 🙏

Hehe, in the end I settled on the olive loaf, chocolate baguette, and chicken rapée baguette sandwich! And the coffee — that exact americano I always get at Fritz!

What the chocolate baguette tastes like
Back home I ate the chocolate baguette first. Instead of the type where the chocolate melts and runs, it felt more like chocolate chips studded throughout the baguette. Denser and more sheet-like than a regular baguette — if you like soft chocolate, this will be right up your alley 🤎


There were nutty bits scattered throughout too, so it worked both as a meal substitute and as a perfect afternoon sugar fix 🤎
Olive loaf and the chicken carrot rapée baguette sandwich
The olive loaf was great plain, and just as good made into an open-faced sandwich! As for the chicken rapée sandwich — ugh, it had a slight banh mi feel, and the bread wasn't hard at all, just a little crisp and soft baguette, so there was zero discomfort eating it! I demolished it in one bite... so I never even got a photo 🥹 Next time I'll definitely try that panuozzo and ciabatta.. oh, and the flan too..!!!
