My mom and I joke that we've bought a car's worth of spicy braised ribs at this point, because we genuinely love this dish. (We really did spend like a million won a month on it, haha.)
The place we used to go to all the time, called Maeundae, closed down, and after that we basically gave up on spicy braised ribs (maegal). The reason we loved it so much was that sharp, spicy taste without too much sweetness — it was really the appeal.
But I finally found a place that rivals that flavor! It's Jimidang, the spicy braised pork rib place in Baekseok. If you like spicy food, you just have to go... I'm recommending this one right off the bat.

The vibe of the restaurant and the owner's thoughtful touches



I made a reservation the day before, and I was pleasantly surprised to see a reserved-table sign already set out when I arrived. The restaurant has a wood-toned, cozy atmosphere — clean but comfortable.


But what really stood out was the owner's thoughtfulness everywhere you looked. A fan, dental floss, hair ties, a phone stand, a lap blanket, a phone charger, even special service for anniversaries — everything you could possibly want was there.


All these small gestures added up to make us feel really taken care of. Most of the side dishes — dongchimi (watery radish kimchi), bean sprouts, pickles, sauces — are refillable, and we actually refilled the bean sprouts twice.
How spicy are Jimidang's braised ribs, really?

We ordered the set for two, which came to 43,000 won. For reference, the meat here is pork rib (deunggalbi).

There are three spice levels — mild, medium, and spicy — and we ordered medium, which they described as about as hot as buldak-bokkeummyeon (fire noodles). I found it deliciously spicy, like 'oh, this is pretty hot,' while my mom found it way too spicy. But even while she kept saying it was too spicy, she also kept shouting that it was so good...
They say mild is about as hot as Shin Ramyun, so if you're a bit worried about spice, I'd recommend starting with mild. The dongchimi and pickles that come with it pair really well with the braised ribs too, and they do a great job of neutralizing the heat.

As for drinks, the Gimpo raw makgeolli was on a 1+1 promotion for 5,000 won...


I was tempted by the makgeolli, but my mom wanted soju, so she had soju and I had cider. They even brought us a cup of ice, which I really appreciated!
What's included in the set for two, and what are the sides?


The set comes with a buckwheat pancake (memilijeon), and the size of it is genuinely enormous. It's tasty dipped in the spicy sauce before the braised ribs even arrive, but personally, I thought it was even better dipped in the braised rib sauce! Haha.

The gondre rice (mountain greens rice) had a nice sticky texture while still being fluffy, and it paired really well with the braised ribs. Mixing in some of the braised rib broth and stirring it together was seriously delicious.


For reference, add-ons don't come included by default, so you need to order whatever you want in advance. We happened to catch a review event, so we got a rice cake add-on for free, and the rice cakes were chewy with a generous portion too. I'd definitely recommend adding the rice cakes.

Most importantly, the braised ribs themselves were incredibly tender. It's not an exaggeration to say these were the best braised pork ribs I've ever had. And since the sauce is so good, everything you dip in it ends up tasting great.

The braised ribs come out cooked just right, ready to eat as soon as they're served. If you're looking for that sharp, spicy flavor without any sweetness, Jimidang will not disappoint. I'm already thinking about trying the spicy level on my next visit.

Honestly, a lot of spicy restaurants these days lean way too heavily on sweetness. You go out for something spicy, but the sugar completely masks the heat, and it leaves this heavy aftertaste. You know that feeling, right?
You don't feel refreshed even after eating, and it puts you in an oddly bad mood — but Jimidang has none of that, so I actually shouted 'eureka' without even meaning to. My mom and I had given up on spicy braised ribs because we hated that taste, but now that we've found this place, we're starting again.
If I lived nearby, I'd be in and out of this place constantly, like a sparrow at the mill. I'm planning to make it a regular stop every holiday from now on. This place truly lives up to its name — 'Jimidang' (the house of true flavor).
Final verdict

To sum up, Jimidang is a Baekseok restaurant I can confidently recommend to anyone looking for genuinely sharp, spicy braised pork ribs that aren't drowned in sweetness.
Tender pork ribs and a well-balanced sauce are the baseline, and on top of that, the owner's thoughtful touches everywhere and generous refills made me completely forget why I ever missed that old closed-down place.
It's more than suitable for a family gathering or a work dinner, and since you can choose your spice level, it works fine even if you're going with someone who can't handle spicy food. If you've been missing that intense spicy flavor like I have, you won't regret making Jimidang your go-to for spicy braised ribs in Baekseok. (Highly recommend!!!)
