Sushi rice balance test at an Incheon sushi shop: Minyeong Hwareo
In short
Minyeong Hwareo Gongjang Moraenae Market Branch is a sushi and sashimi takeout shop inside Moraenae Market in Namdong, Incheon. Ordering the Moraenae sushi, 10 pieces for 13,000 won, and futomaki (thick sushi roll), 5 pieces for 15,000 won, to eat at home, the salty soy sauce played well against the faint sweetness of the sushi rice, and the futomaki was a thick roll with tuna and salmon making up more than half the filling. For the taste and the portion, Minyeong Hwareo Gongjang is a reasonably priced, good-value sushi takeout.

I've been posting for a while now but this is my first ever sponsored review, so I was a little nervous, haha. I went to Minyeong Hwareo Gongjang inside Moraenae Market. This market has so many restaurants that I've actually come here a few times just to eat. This particular shop is takeout only, and since I already like buying food to eat at home, I went in without any pressure.

I ordered the Moraenae sushi and the futomaki. I was curious about the sushi overall, and futomaki is a menu I already love. When I eat sushi I usually avoid a one-note order, so I picked a combination that would let me try a variety of flavors.
How the cold-bag packing held up

Minyeong Hwareo Gongjang Moraenae Market Branch packed everything neatly into a cold bag with an ice pack inside. The weather's gotten cooler, but it's still warm while the sun's up, so I figured I'd better hurry home.
What service is like with market customers

As I was paying and about to leave, I noticed two elderly customers looking over the sushi, clearly deciding what to get. The staff member explained the menu to them in real detail. It left an impression on me, so I snapped a photo.
Even though the staff were young, they were this considerate — I could see why that kind of kindness would go over well in a market with so many older customers.
Opening the box at home: the powdered miso soup

Here's the futomaki and Moraenae sushi I brought home. It felt a bit strange, honestly — every post I've written so far has been about food eaten out or cooked myself, and this is the first time I'm photographing and reviewing something I didn't make.

Along with the sushi they gave ginger, a small dish of soy sauce, and miso soup — but as a powder, meant to be mixed with water yourself. I'd never seen that before, so it caught me off guard a little. Every sushi place I've ordered delivery from always gave a ready-made soup. But if you're carrying sushi in a cold bag, packing a hot soup alongside it could get awkward depending on the situation, and a cold soup isn't great either. Giving it as a powder is actually a smart idea, I thought.
Moraenae sushi, 10 pieces: rice-to-fish balance

Every piece of the Moraenae sushi was genuinely delicious — and I'm not saying that just because this is a sponsored post. When I eat sushi, I really care about the sushi rice (shari). Raw fish is only lightly seasoned with soy sauce, so its own aroma and flavor aren't that strong. Here, none of the sushi is dressed up with extra seasoning either, which made the balance between fish and rice even more important. When I dipped a piece in soy sauce, the saltiness hit first, then a faint sweetness spread out as I bit into the rice — the balance was really well judged. They nailed that harmony. The fish itself was great too. The salmon had its characteristic rich, oily aroma coming through nicely, and the flatfish, being fresh off the tank, had a really good texture. Everything else was excellent as well.
Futomaki, 5 pieces: what is inside the roll

I've had futomaki (thick sushi roll) at a few other shops, and the filling varies quite a bit place to place, so it's always a menu I'm curious about ordering again elsewhere. The futomaki at Minyeong Hwareo Gongjang Moraenae Market Branch has avocado inside, plus a huge amount of tuna and salmon. It was a genuinely fat roll.
Instead of being padded out with rice, it's packed with filling — the rice layer was thin and tuna and salmon made up more than half of it. There was a bit of eel too, and thin pickled radish for a crunchy texture. It was so thick I couldn't finish a piece in one bite. They really don't skimp here.
Verdict: is the Moraenae sushi good value?
Overall, the price was reasonable for the taste and portion size — actually, better than reasonable. For this kind of spread, I've seen other sushi shops charge ₩3,000–5,000 more. Even judging purely on value, this is a good shop.
