Before heading to the airport for a trip to Nha Trang, I decided to have a solid meal first. Knowing I'd be eating Vietnamese food for the next few days, familiar Korean food actually sounded more appealing right before departure. I thought about kimchi jjigae or gukbap, but what I ended up choosing that day was hot pork bone soup (ppyeo haejangguk). I wanted to start the trip with a spicy broth and plenty of meat, so I visited Eolkeunhan Ppyeo Haejangguk Suwon Ingye Branch.

The tables were quite spaciously arranged. At a lot of restaurants the tables get packed in tight and you end up minding your neighbors while eating, but at Eolkeunhan Ppyeo Haejangguk Suwon Ingye Branch there was plenty of room between tables, which made the meal feel a lot more comfortable.

This matters especially for a soup dish like ppyeo haejangguk, where you need room for the bone pot along with all the side dishes — and the generous table space meant there was no shortage of room to set everything down.

There was also a separate space set apart toward the back of the restaurant, big enough for a larger group, so it looked like a good option for visiting with family or friends. Personally, I really liked how spacious the tables were — it made eating so much more relaxed. Since the restaurant serves late into the evening, it also seemed like a good option for anyone in Ingye-dong looking for haejangguk for dinner.

One thing I found a bit unusual at Eolkeunhan Ppyeo Haejangguk Suwon Ingye Branch was that the price is set according to spice level. At most haejangguk restaurants, you order the base menu and then just ask for a spice level, but here the menu itself is divided into extra spicy, spicy, medium, and mild — meaning the same bone soup is priced differently depending on the spice level you pick.

I generally enjoy spicy food quite a bit. Eating something spicy and hot usually feels stress-relieving, so on a normal day I probably would have gone straight for the extra spicy option without thinking twice. But since I had a Nha Trang trip coming up right after, I wanted to avoid anything too intense. Thinking about how I'd feel once I got to the trip, something moderately spicy but still easy on the stomach seemed like the better call. So I actually appreciated being able to choose the spice level myself.

Anyone who loves spicy food can go all in with the extra spicy option, and anyone who wants it milder, like me that day, can pick spicy, medium, or mild instead. Being able to match the spice level to your mood or condition that day, even with the same bone soup — that was a surprisingly nice touch :)

The basic side dishes were simple — kkakdugi (diced radish kimchi), pickled onions, and a dipping sauce for the meat. The kkakdugi in particular had a crisp, tangy, clean flavor that paired really well with the rich soup broth. Personally, my favorite combination was dipping the meat in the sauce and pairing it with the pickled onions and kkakdugi. It wasn't a flashy side dish spread, but it was more than enough to go with the bone soup.

I ordered the special bone soup in the mild-medium flavor. Compared to the regular bone soup, the bones and the meat portion definitely felt more generous. Just picking the meat off the bone was enough to fill me up pretty well, and mixing rice into the broth made it plenty for a full meal. The broth hit spicy notes right away, but it wasn't overwhelmingly hot — the rich, deep flavor typical of bone soup came through with just the right amount of heat, which paired nicely with rice.

The meat came off the bone easily with just a light touch of the chopsticks, and the lean parts were tender rather than dry. It was good on its own, but dipping it into the sauce mentioned earlier gave it a whole different flavor, so I kept going back and forth between plain and dipped. The spicy broth made the rice go down easily too, and before I knew it, the bottom of the pot was showing. Given how generous the meat portion was for the special bone soup, the 14,000 won price didn't feel like a stretch at all — a solid choice for when you want a proper, filling meal.

Wanting a solid meal before heading off to Nha Trang, I visited Eolkeunhan Ppyeo Haejangguk Suwon Ingye Branch, and thanks to the generous meat and spicy broth, it felt like I'd properly fueled up for the trip. The special bone soup in particular had plenty of meat to fill up on, and the broth was spicy without being overly harsh, so it never felt like too much.

Being able to choose the spice level also made it easy to order according to my mood or condition that day. This felt like a place I'd think of again on a day when I want a hot broth and a hearty bowl of bone soup.
