From the entrance, Hamdon Baegot has a modern, clean look. The sign is easy to spot from a distance, so I found it without any trouble.

What caught my eye right away at the entrance and inside was the large dedicated meat aging chamber! Seeing fresh raw meat aging under carefully controlled temperature and humidity boosted my trust and expectations for the flavor.

Stepping inside Hamdon Baegot, the ventilation was excellent — no smoke or lingering smell, just pure comfort. The tables were arranged comfortably, making it a great space for group gatherings or work dinners in Baegot.

I'm pretty particular about hygiene when I eat out, and I was impressed to find the utensils individually wrapped! No multiple hands touching them — a small detail that really won me over.

Ordering was simple with the tablet at each table. The menu photos, compositions, and descriptions were detailed enough that I could pick what I wanted without calling a staff member over — really satisfying.

As soon as we ordered, a table practically groaning under a generous basic spread was laid out. The card explaining the side dishes made it clear how much thought went into each item.

The bone soup, even though it's a free side, came with a whole chunky pork bone with plenty of meat still attached — I was surprised! Simmered so long that the meat fell off with just a touch of chopsticks, the broth was clean yet refreshing, filling us up even before the grilling began.

Minari (water dropwort), green onion kimchi, pickles, baek kimchi, plus Maldon salt, barley ssamjang, shiitake wasabi, and myeolchi jeot (anchovy sauce) — a wide variety of side dishes that brought out the flavor of the meat.

With just the two of us, we first ordered one serving each of ogyeopsal (pork belly) and moksal (pork neck). True to properly aged meat, the pieces were thick with a bright reddish-pink color — a perfect visual.

What made it especially easy was that a staff member did the pre-grilling with practiced hands to lock in the juices! They cut the thick raw cuts into just the right size and got them crispy outside, tender inside — after that, we just gave them a little extra grilling to our taste.

The moksal was juicy and tender with no dryness, and the ogyeopsal had that great balance of chewy, savory skin — I immediately understood why Hamdon is known for its grilled samgyeopsal (pork belly) in Baegot!

Hamdon's real charm shines through in the variety of side dish pairings! I tried the clean Maldon salt and the umami-packed shiitake wasabi to taste the meat's pure flavor, dipped it in gochujang with fresh minari to wrap it up, and also tried it with myeolchi jeot alongside green onion salad. Switching up the combos meant I never got tired of it — my chopsticks just kept going.

The separately ordered doenjang jeongol also came generously loaded with big, hearty chunks of meat, making for a rich, savory broth! With so many ingredients, the stew alone was filling.
