Nampo Station tripe grill, summer return, medium stone pan: Bupyeong
In short
Bupyeong Yang Gopchang (부평양곱창) is a beef tripe and intestine (yang gopchang) restaurant in Nampo-dong, Jung-gu, Busan, between Bupyeong Kkangtong Market and Gukje Market. After a winter visit, the writer returned to Bupyeong Yang Gopchang in summer, ordered the medium seasoned stone pan (₩45,000) instead of last time's small, and finished with udon noodles and fried rice; the outdoor seats were almost full even at an early dinner. With smoky, chewy gopchang and a spicy-sweet sauce, Bupyeong Yang Gopchang is a great old-school spot for a glass of soju.

Bupyeong Yang Gopchang: back in Nampo-dong for more tripe
Bupyeong Yang Gopchang (부평양곱창) is a well-loved beef tripe restaurant in Busan's Nampo-dong. I went to Nampo-dong and ended up craving gopchang (grilled beef small intestine), so I came back. People were still overflowing inside and outside the restaurant!

Where is Bupyeong Yang Gopchang and how do you get there?
Bupyeong Yang Gopchang is at 17 Bupyeong 2-gil, Jung-gu, Busan, between Bupyeong Kkangtong Market and Gukje Market, about 5–10 minutes from Nampo Station or Jagalchi Station. There's no parking, so you'll need a nearby public car park.
With so many markets around, you can wander about and soak up that homey Busan atmosphere too. Public transport access is good, so even those without a car can easily walk here 👍 Top-notch access :)

Outdoor seats nearly full even at an early dinner
The red sign reading 'Bupyeong Yang Gopchang' stands out from far away, and it has that relaxed local-restaurant feel that's easy to walk into. Last time I visited in winter, and this time it was summer. Even though we came really early for dinner, the outdoor seats were almost completely full :)

It was so crowded inside that I barely got any photos. The tables are generally spacious so it wasn't uncomfortable, and they're covered with plastic sheets, so it's hygienic and the turnover is quick. It's a comfortable, casual place to sit and drink.

Bupyeong Yang Gopchang menu and prices
At Bupyeong Yang Gopchang, the seasoned stone pan, salt-grilled and hotpot are all ₩40,000 (small), ₩45,000 (medium) and ₩50,000 (large), and the steamed egg in an earthenware pot is ₩3,000. This time we ordered the seasoned stone pan (medium), fried rice and udon noodles.
- Seasoned stone pan (small) ₩40,000 / (medium) ₩45,000 / (large) ₩50,000
- Salt-grilled (small) ₩40,000 / (medium) ₩45,000 / (large) ₩50,000
- Hotpot (small) ₩40,000 / (medium) ₩45,000 / (large) ₩50,000
- Steamed egg in earthenware pot ₩3,000

The basic side dishes came out neat and tidy: tangy-sweet fresh napa cabbage kimchi (geotjeori), siraegi doenjang soup (dried radish-greens soybean paste soup), cabbage salad and pickled radish wraps (ssambu).

Medium seasoned stone pan: sizing up after trying the small
Last time I ordered the seasoned stone pan (small), so this time I went for the medium. The stone pan came out not long after we ordered..

The seasoned stone pan arrived with bright red sauce tossed through the gopchang ✨️ What is going on with how good this looks..?? The gopchang pieces are clearly plumper than at other places, and the creamy white insides really make my mouth water.

How did the seasoned stone pan gopchang taste?
The gopchang at Bupyeong Yang Gopchang is lightly charred on the stone pan with a subtle smoky aroma, and the inside stays chewy. Biting into a piece, I loved that it had a good, satisfying chew 😋

The sauce isn't separate from the meat either; it's evenly soaked in, and it's addictively spicy so I kept reaching for more. Spicy yet sweet, with real depth of flavor 👍
There was also a fair amount of beef heart mixed in, which was clean and mild, and great when you get tired of the gopchang ✨️

Udon noodles first, then fried rice to finish
We added udon noodles and fried rice at Bupyeong Yang Gopchang :) Before the fried rice, we stir-fried the udon on the grill pan a little. The noodles were chewy, the sauce soaked in between the strands, and it was moist and tasted like stir-fried udon.
And now the grand finale: the f.r.i.e.d. r.i.c.e. Fried rice after gopchang is basically the golden rule, right? 🫶

The rice is stir-fried on the grill pan so it's fluffy, nutty from the fat rendered by the gopchang, and packed with savory depth, so it can't possibly be bad. It wrapped up a hearty meal. If you want gopchang and a glass of soju in an old-school setting, I recommend Bupyeong Yang Gopchang in Busan's Nampo-dong, where the seasoned stone pan gopchang is so good 💚
